The NV Extra Brut Corallian Classic Cuvée is a blend of 88% Chardonnay, 8% Pinot Noir and 4% Pinot Meunier, based 79% on the 2022 vintage, that spent 19 months on lees. The tart, fresh perfume of Boskoop apple is foremost on the nose, overtaking even the zesty lemon. The palate is fine-boned, bright, crystalline and supremely pure, with an enticing umami backdrop and frothy, foamy mousse that distracts a little from the exquisite aromatics of the fruit. A lovely wine that strikes a happy, brisk balance with lots more mileage ahead. In fact, it will benefit from bottle age. Dosage is 1.5 grams per liter. Disgorged: March 2025.HK$1,330.00
