Wow! The aromas to this are really exceptional, with a tangerine edge to the blackcurrants, graphite, lead pencil, flowers and wet earth. It changes all the time. So expressive and refined. Full-bodied with great intensity and depth of fruit. The ultra-fine tannins display millions of layers. The texture on the palate is superb and lasts for minutes. I loved this when first tasting it in bottle, and it is totally living up to my expectations. The clarity of flavour and the sense of energy ensures it just springs out of the glass, ready to please and without the slightest hint of a dip through the mid palate. Sangiovese signature comes across in raspberry, red cherry, rose petals, tobacco, freshly cured leather, great persistency through the palate, showing balance and finesse. The tannins are fine and silky but not afraid to ask for engagement and time from those of us lucky enough to be tasting it. Even better and a prodigious effort that hits all my sweet spots, the 2011 Ermitage Le Pavillon comes from one of the top terroirs on Hermitage hill, the granite soils of the Les Bessards lieu-dit. Spectacularly perfumed, with raspberry, blackberry, licorice, toasted spices and assorted floral nuances, this full-bodied effort has massive depth and richness, no hard edges and masses of finely polished tannin that emerge on and frame the finish. If awards were given out for sensuality, this gem would take the trophy. Incredibly sexy, with its velvet drenched textures, silky tannins and opulent personality, this wine stands out in a crowd. The nose, with its aromatic display of flowers, plums, cherries, espresso, licorice, dark cocoa and oyster shell is compelling. The seamless finish crosses the 60 second mark with its non-stop display of concentrated, perfectly ripe, dark sweet, red fruits, chocolate, licorice and spice. If you can afford it, it is a wine you should have in your cellar and you'll want to age this for at least 15 years before popping a bottle. The Grand Vin 2020 Château Cheval Blanc checks in as a blend of 65% Merlot, 30% Cabernet Franc, and 5% Cabernet Sauvignon that was raised, as always, in 100% new French oak. As usual with Cheval Blanc, it's primarily about finesse and elegance, as well as complexity, and exhibits a deep purple hue as well as a kaleidoscopic bouquet of sweet red and black fruits, spring flowers, spicy incense, loamy earth, and smoke tobacco. Absolutely flawless on the palate, it's full-bodied, has perfectly integrated oak, ripe, silky tannins, and a gorgeous finish that keeps you coming back to the glass. This powerful, concentrated Cheval Blanc offers pleasure even today (needs lots of air) but warrants 7-8 years of bottle age and will see its 40th birthday in fine form.HK$28,800.00 -

Deep garnet-purple in color, the 2010 Astralis is still quite primary eliciting aromas of black plums, blueberry compote and blackcurrant liqueur with a savory and baking spice undercurrent plus a fragrant whiff of violets. Very structured, fine and complex in the medium to full-bodied mouth, this wine is revealing much more than when I first tasted it a year ago and is now showing layer upon layer of black fruit preserves, mocha, toast and spices before finishing with great length. Another perfect wine from this brilliant estate is the 2016 Châteauneuf-du-Pape, which matches the otherworldly 2007. A classic blend of 60% Grenache, 30% Mourvèdre and 10% Syrah brought up all in old foudre, this beauty's deep purple color is followed by a mammoth bouquet of kirsch liqueur, black currants, blueberries, Asian spices, and garrigue. Full-bodied, concentrated, and powerful, it nevertheless is as graceful as a ballerina on the palate and has ultra-fine tannins, a silky, seamless texture, and a finish that just won't quit. Medium to full-bodied, the palate is both opulent and energetic, revealing loads of perfumed black fruit layers and a plush, polished texture, finishing with epic length and depth.HK$10,880.00 -

A blend of 84% Cabernet Sauvignon, 8% Petit Verdot and 8% Cabernet Franc aged in 40% new oak, the 2016 Proprietary Red Wine is deep purple-black in color and quite reticent at this youthful stage to begin, offering up subtle notions of potpourri, Indian spices, cigar box and iron ore over a core of crushed blackberries and black cherries with intermittent wafts of black and red currants, new leather and smoked meats. The palate is medium to full-bodied with a densely packed mid-palate and oodles of freshness framed by very ripe, finely grained tannins and laced with compelling earthy accents. It offers incredible vibrancy with tons of black and red fruit sparkle in the mid-palate leading to a provocative mineral element on the very long finish. Composed of 90% Cabernet Sauvignon, 4% Cabernet Franc, and 6% Petit Verdot, the 2019 Dominus was harvested from September 29 to October 10. It was aged in 40% new oak. Deep garnet-purple colored, the nose slowly unfurls to unveil beguiling floral notes of candied violets and rose oil over a core of crème de cassis, blackberry pie, and plum preserves, giving way to notions of licorice, Indian spices, iron ore, and crushed rocks. Full-bodied, the palate is jam-packed with taut, muscular black fruit layers, intertwined with gorgeous floral and exotic spice accents, and framed by firm, finely grained tannins with seamless freshness, finishing long and mineral-laced. Tightly coiled with so much latent energy waiting to explode, this is a spectacular expression of the vintage and Napanook vineyard. Still tightly coiled, give it a good 6-7 years in the cellar before broaching, and allow it a few hours in a decanter if consumed before 2032. 3500 cases were made, to be released in May 2022.HK$18,000.00 -

I was really looking forward to tasting the 2013 Gran Enemigo Gualtallary Single Vineyard since all of the previous vintages have been truly exceptional, and I wanted to see what it would be in a cooler year. The bottled wine contains perhaps 15% Malbec in the blend, and they will soon stop mentioning Cabernet Franc on the label. It fermented in 500-liter oak barrels with 50% of the Cabernet Franc and all of the Malbec and then matured in used oak foudres. It's very intense and powerful, but at the same time, there is a kind of lightness on the palate that makes if feel light on its feet but with great inner power. There is citrus acidity that makes it effervescent and electric. It has some 7.5 grams of acidity and a pH of 3.45, very healthy parameters. The peppery character appears after some time, giving it a Chinon-like twist, and it also reminds me of my favorite Bordeaux, Pomerol's Lafleur. This is definitely world-class and worth lying down, as it should develop further complexity in bottle. This is one of those wines where the only improvement I can think of is having magnums rather than bottles. Bravo! Some 3,000 bottles produced. It was bottled in March 2016.HK$9,000.00 -

It needs considerable swirling to coax out its alluring perfume of redcurrant jelly, juicy blackcurrants, and blackberries, with underlying suggestions of candied violets, chocolate box, fragrant earth, and lavender plus a touch of crushed rocks. Medium to full-bodied, the palate has a mind-blowing array of layers with exceptionally ripe, fine-grained tannins and jaw-dropping tension, leading to a fantastically persistent mineral and floral-tinged finish that makes your heart stop. With its energy, structure, and incredible depth, truly, this is a towering triumph.HK$15,000.00 -

The 2016 Flaccianello della Pieve is off the charts. Fresh, vibrant and explosive, with tremendous overall intensity, the 2016 possesses magnificent richness, with sumptuous fruit purity and simply unreal balance. Creamy, silky tannins add to the wine's sophistication and overall polish. The 2016 is dark, inky and powerful, but not at all heavy. Giovanni Manetti gave the 2016 18 months in French oak (75-80% new), followed by 6 months in cask. This is the first vintage in which a small amount (2%) of the wine was aged in amphora. The 2018 Flaccianello della Pieve is another stellar wine from Fontodi. It is the richest Flaccianello ever made (in terms of dry extract), with elevated acidity that trails the 2016 by just a touch, but it does not taste like that at all. Dark cherry, violet, lavender, spice, mocha and graphite build with a bit of time in the glass. Like the Sorbo, the 2018 Flaccianello is not a wine of size, as in most previous years, but rather a wine that exudes vibrancy, energy and class from start to finish. The 2018 Estate Cuvee checks 45% Syrah, 40% Cabernet Sauvignon, 15% Petit Verdot brought up in 90% new French oak. Tasting like the straight Cab, yet with more sex appeal, it offers a huge nose of crème de cassis, white flowers, crushed stone, graphite, and crushed flowers. This carries to a full-bodied, gorgeously textured red with incredible balance, no hard edges, a thrilling mid-palate, and a great, great finish. It's going to benefit from 5-6 years of bottle age and keep for upwards of two decades or more. Hats off to winemaker Stephan Asseo on another incredible wine, as well as, I suspect the wine of the vintage.HK$5,500.00 -

Incredible cassis and black berry fruits as well as violets, chocolate, graphite, and who knows what else emerges from the glass, and it hits the palate with full-bodied richness, a concentrated yet weightless mouthfeel, building tannins, and a great finish. The 2019 Châteauneuf Du Pape Prestige Blanc is pure gold and a magical, perfect wine from this incredible family estate. Based largely on Roussanne with smaller amounts of Grenache Blanc and Clairette, it was brought up in used demi-muids. Honeyed pineapple, caramelized white peach, mango, honeysuckle, and exotic rose petal notes all emerge from this full-bodied white, which has bright acidity, incredible depth of fruit, and flawless balance. This extraordinary white needs plenty of air to show at its best (you could even open it the day before and keep it in the refrigerator overnight), and I suspect it will have two decades or more of overall longevity.HK$3,600.00
