Even better and a prodigious effort that hits all my sweet spots, the 2011 Ermitage Le Pavillon comes from one of the top terroirs on Hermitage hill, the granite soils of the Les Bessards lieu-dit. Spectacularly perfumed, with raspberry, blackberry, licorice, toasted spices and assorted floral nuances, this full-bodied effort has massive depth and richness, no hard edges and masses of finely polished tannin that emerge on and frame the finish. Huge crème de cassis, crushed flowers, graphite, and liquid rock notes all dominate the bouquet, and this massively rich, powerful, yet pure and classic Hermitage builds incrementally on the palate, has a wealth of tannins, flawless balance, and a great finish. Showing the sexy, expressive style of the vintage, it has some upfront charm, yet I suspect it will close down (as has the 2015) with a few years of bottle age and require a decade or more of cellaring. The star of the show as well as one of the wines of this great vintage, the 2019 Ermitage Le Pavillon comes all from broken granite soils of the Bessards lieu-dit and was all destemmed, vinified in concrete tanks, and brought up in just 15% new French oak, with a tiny amount in a small foudre as well. The level of new oak continues to plummet at this estate, which around a decade ago or more was utilizing 100% new barrels. Full-bodied, concentrated, and powerful, it’s a perfect example of the Iron Fist in a Velvet Glove saying and has incredible opulence paired with precision and finesse. Giving up both blue and black fruits as well as powdered stone, violets, scorched earth, and subtle smoke, this is pure Hermitage magic and Syrah doesn’t get any better. Aged 18 months in 30% new barrels, its purple/plum color is followed by a huge nose of blackcurrants, graphite, toasted spice, crushed rocks and saddle leather. Powerful, massively concentrated, and tannic, it has a broad, expansive, heavenly texture, a thick mid-palate (you could almost use a fork for this beauty), and a great finish. Despite the richness level, it stays balanced and graceful on the palate, and is never over the top or heavy. Sensationally concentrated, opulent, and multi-dimensional on the palate, it has bright acidity and an awesome sense of minerality that keep the wine chiseled and focused on the palate. Built for the long haul, the 2018 Ermitage Ex Voto Blanc is a majestic, noble white that could only come from this incredible, south-facing hillside in Hermitage. Revealing a light gold hue as well as notes of quince, honeyed minerality, toasted spices, orange marmalade, and spring flowers, this deep, rich, and full-bodied white has absorbed just about every trace of its oak élevage and has a concentrated, rich, yet focused and lengthy style. This cuvée had a more oaky, opulent style in the past, but today it comes across as a much more pure, elegant wine while not giving an inch with regard to density, texture, and concentration. As with just about every top Hermitage Blanc today, this offers plenty of immediate pleasure with its pure, fresh, mineral-laced style. Don't discount how much pleasure these wines can offer in their youth and always ignore the "always too young" crowd. This 2018 is going to evolve gracefully and drink brilliantly for 5-7 years, then (maybe) go into a closed, almost oxidative stage, only to emerge after 5-7 years and evolve for decades.HK$9,010.00 -

I’ve rated the 2003 Hermitage perfect on numerous occasions, and while sound bottles are still as good as it gets, I’ve also had some tired bottles here in the States, so provenance is critical with this vintage. Still youthfully colored yet just starting to show some maturity in its aromatics of blackberries, dark currants, licorice, spice box, and leather, this fabulously textured, opulent 2003 hits the palate with full-bodied richness, a wealth of sweet tannins, and a monster of a finish. Clearing 15% alcohol (and I think the pH is probably around 4), it should be a required tasting for all those touting the low alcohol nonsense. Reminding me slightly of the 2009, it possesses off-the-charts richness and depth, but like all great wines, stays pure, balanced, and light on its feel. Of the three benchmark la Chapelles ('90, '78 and '61), the 1961 Hermitage la Chapelle is the largest, most massive and over-the-top of the trio. Offering a stunning - literally off the charts - bouquet of truffles, soy sauce, smoked meats, coffee bean and wood smoke, it is the absolute essence of this cuvee and of the magical, south-facing Hermitage Hill from where it comes. Thick, unctuous and massive on the palate, I can only imagine what this beast of a wine must have tasted like in its youth. I also wish every winemaker/person who comments about a wine being too big, too rich, or too over-the-top could have a glass of this elixir. It's certainly fully mature, yet it still amazingly has sweet tannin and no shortage of fruit or texture. Given its mid-palate density, it will most likely be a 100-year wine.
