Sisseck believes the texture of the 2021 Pingus is the finest he has achieved since the beginning and something that the Tempranillo does very well. There is a chalky feeling, which is not surprising, because the mother rock is pure limestone—even if some plots (Barroso) have more clay on top, deeper down is hard limestone and some sandstone. There is a sense of harmony and purity that I see in most of the 2021s. There's more depth, more concentration and more tannin here, and it's a wine for the very long haul; it's very, very young, but it's super harmonious and balanced. There's energy, clout and power but with great finesse. They have learned to control the extraction, and all of the grapes fermented with indigenous yeasts (each plot ferments on its own, there's no pied de cuve or anything); they are very careful to decide the moment they press, tasting a lot with a lot of precision, getting samples and sitting down to taste every day after the wine has fermented dry. He fermented the wine with some 30% of the clusters, which are selected at the sorting table when they see a perfect bunch. When they have full clusters, they have to do a delicate pigeage (not the case in 2022, but he used some in 2023). This is a super elegant and powerful Pingus that should age for a very, very long time in bottle. The drop-dead gorgeous Barbaresco 2019 Asili Riserva from the Produttori del Barbaresco stuns with its extreme finesse and heady scents of wild rose, red berry, camphor, leather and brown spice. Full-bodied and vibrant, the elegant, linear palate delivers red cherry, blood orange, star anise and ground clove alongside youthfully tight but extremely refined tannins. Dazzling complexity in both the nose and palate. Full-bodied, yet tight and harmonious. The tannins melt into the wine. Drinkable now, but one for the cellar. (Napa Valley; 100% Cabernet Sauvignon; 13.5% alcohol). Utterly beguiling. Gracious, calm, relaxed, composed, a little introvert and reticent but exuding class and balance and harmony even in its slight introspectiveness. Delightfully subtle. The delicate floral notes are the first to show – peony and lilac. Then the fruits. Cassis. Blueberries. And there’s a lovely slight stalky leafiness that really brings out the character of the Cabernet. So gracious. So utterly beautiful. Exquisitely balanced. There’s a diaphanous sheen and gloss to this that is so beguiling and it is so much less demonstrative in its intensity and concentration than any other Napa wine. I’m in raptures. Note the low alcohol. This was picked early – so early in fact that the forest fires had yet to begin.HK$21,500.00 -

The 2017 Vintage Port Nacional is a field blend, mostly Touriga Nacional, Touriga Franca, Tinto Cão, Sousão and Tinta Roriz, aged for 18 months in old wood. It comes in at 99 grams of residual sugar and was bottled about a month before this tasting after 18 months in wooden vats. In 2016, I might've made an argument that the regular Noval was better. In this vintage, this seems to be a clear choice, granting that Ports change constantly in their youth. Its siblings at all levels in the last few vintages are very fine, but this is an indisputable benchmark that seems to better them all. Rich and vibrant, this has plenty of stuffing and flavor, more than the regular Noval. Then, it adds layer after layer of power. A couple of hours of air makes both the flavors and tannins more intense. It is simply gripping—yet also remarkably fresh. It's a great Noval, and one of the shortlist candidates for Wine of the Vintage. There were 200 cases produced.HK$8,600.00
