I have been terribly excited about this wine since I first learned that (part of) it was still in cement waiting to be bottled in September 2013. I consider the rare white Castillo Ygay one of the greatest white wines ever produced in Spain, and the 1986 Castillo Ygay Blanco Gran Reserva Especial is a great addition to the portfolio of the winery--an historic wine that is coming back to life. I did a vertical tasting of many of the old, historic vintages of this wine, and they are included in a separate article in this very same issue. This 1986 had seen the light as a limited early release bottled in 1992 and sold around 1995, and some bottles might still be found in the market. But most of it remained unbottled and was kept at the winery, where it stayed in oak for 21 years, followed by some six years in cement vats until it was bottled. It has 13.5% alcohol, an extremely low pH of 2.98 and 6.75 grams of acidity (tartaric). It has a very subtle nose and it's a bit shy, a little closed at first. It was only bottled one and a half years ago, and it's not crazy to say that the wine is showing extremely young. The wine shows more open the day after, when it has developed some nuances of mushrooms and verbena tea. This is mostly Viura with perhaps a pinch of Malvasía Riojana (aka Alarije). The palate is both powerful and elegant, with superb acidity and great length, with volume and sharpness, with a mineral, umami-driven finish. It fills your mouth, tickles your taste buds and makes you salivate. There is nothing negative about the wine; there is no excess oak, nothing blurry, nothing to improve... perhaps the bottle used! I think this is a perfect wine. It seems to be getting younger and younger with time in the glass; it seems to be getting more focused and sharper, and I have no doubt the wine will evolve and last for a very, very, very long time in bottle. I kept the opened bottle for almost one week and the wine didn't move one inch--no oxidation or any signs of fatigue. Having tasted many other vintages, including the also perfect 1919 (which is still going strong at age 97), I have no doubt we're talking about a white for the next 50 years. Looking at the older vintages, I might even be underestimating its life span. The potential next release could be the 1998 in no less than ten years' time.HK$19,950.00 -

The 2019 Brauneberger Juffer-Sonnenuhr Riesling Spätlese is fascinatingly pure, bright, refined and flinty on the nose that reveals very fine Riesling, slate and iron aromas. Pure, fresh and filigreed on the palate, this is a crystalline, fresh and piquant, crisp and crystalline JSU Spätlese in the acidity-accentuated MFR style. From vines planted in the 1890s, the 2019 Wehlener Sonnenuhr Riesling GG "Uralte Reben" trocken is still quite reductive on the nose but very fine, bright and floral on the delicately slatey and intensely fruity yet subtle nose. Intense and powerful on the palate (at 11.5% alcohol!), this is a crystalline, tight and salty Sonnenuhr with still shy mirabelle aromas on the nose. I tasted this wine for the very first time on the 31st of January and it moved me so much that I wanted to write it up on the spot. It was clear to me that this bottle was a once in a lifetime Sauvignon Blanc experience. I was told I couldn’t review it because it was a preview sample and it was not due into the UK until later in the year. Since first tasting this wine I have been playing a game of trying to think of a finer wine made from this oft-derided and seemingly out-of-fashion-with-the-cognoscenti grape. From the hundreds of labels made by the acknowledged Sauvignon Blanc masters of the universe, I cannot think of a single wine which combines all of the epic SB attributes in one single wine. Pavillon Blanc du Château Margaux, Haut Brion Blanc (ok, this has Semillon on board), Gembrook Hill, early Cloudy Bays, countless Chavignols from Cotat, Redde’s own wines, Cantine Terlano, Colterenzio, Reverdy, Spottswoode, Casa Marín, Dagueneau, Dog Point, Jackson Estate, The Berrio, Iona, Viña Leyda, Dry Creek Vineyards, Larry Cherubino’s epic 2017, The Lane Vineyard’s Gathering (again with Semillon loitering with intent), Shaw Smith, Cape Point Vineyards, Duckhorn, Greywacke, Boulay, Pellé and on and on, are all fantastic Sauvignons, but they are not as complete nor as enchanting at 2017 Barre à Mine. We can all circumnavigate the globe and pick any one of a hundred talented Sauvignon Blanc wizards’ creations and while their wines are undoubtedly delicious, impactful and worthy of admiration, I cannot remember a bottle which has the cosmic balance or the inescapable magic that this one does. I tasted it again last night and came to the conclusion that this is a wine which cannot be improved so, while I never thought that this day would come, I am overjoyed to give a Sauvignon Blanc a perfect 20/20 in my tasting notes. Barre à Mine translates as ‘Crowbar’. Never has such a blunt instrument inspired such an exquisite flavour.HK$3,800.00 -

Produced from a flint site that needed to be blown up to make the terroir and made from relatively young vines, this is initially a tender and supple style with a whiff of gunsmoke/flint, a taut line of precision that runs through its core, a mere hint of green herbs reminding you that Pouilly is a Sauvignon producer and even a hint of white pepper. It's a powerful style that has an attractive sense of bitterness holding it together. At just 13%, this is wonderfully balanced, aromatic and driven in this vintage. You may even feel this sense of spice that warms the palate, almost like you've had a warming Indian curry - it's not the alcohol but something else - maybe it's the lint. 100% Sauvignon Blanc. The only vineyard that exists in DO Zapallar and located just 7 km from the coast. Clayey enriched soils and a dry steppe climate. Hand-harvested bunches are destemmed, cold-soaked for 12–24 hours, the must is settled for 24 h, then inoculated with Saccharomyces cerevisiae and Torulaspora yeasts. Fermentation at low temperature. Aged on its lees for 6–8 months. How much pleasure! A wine with a lot of aroma, with endless layers of aromatic complexity. It has a great mouth-coating texture triggering a herbal memory. The palate is full, rich, pleasant, although with sharp acidity above the rich texture. It is very well delineated, fresh, rich, deep and concentrated. A complete Sauvignon Blanc that will make you salivate. Delicious!HK$1,280.00 -

Starting to take on a deep golden hue, the 1997 Moulin Touchais Coteaux du Layon is a sensuous sweet wine (92g/L of residual sugar) that offers ripe and concentrated flavors of apricot jam, cooked oranges botrytis-derived spices (60% of the fruit was affected by botrytis, a high proportion for this wine). It is intense, rich and honeyed, coating the palate with its sucrosity. There's just enough acidity here to keep things going but it does not have the vivacious refreshment of cooler years, providing a weightier, fully charged expression. Bottled after 12 months, this is a very, very pretty vintage with lower yields but also beautiful fruit purity, precision and a wonderful fruit – acid balance. The aromatics are ripe, succulent and opulent showing honeysuckle, white blossom, lemon cordial, dried herbs and lovely white peach and pineapple pastille notes. Nevertheless, the stand out feature on the palate is undoubtedly the textural sophistication, harmony and chalky minerality combined with super tangy acids bursting with lemon rock candy, white peach and crystalline citrus flavours. Simply an incredible intensity with a harmoniously weightless balance combined with a long, piercing finish. This is definitely a noticeable step up on previous vintages and an incredible achievement for the Mullineuxs! Drink now to 2034+.HK$1,700.00 -

The 2017 Ornellaia Bianco shows a bit less nerviness than it has in the past. Then again, this is 2017. Orchard fruit, white flowers and tropical overtones add lovely shades of nuance. In 2017, the Bianco also has a bit of Viognier, which no doubt adds richness. In previous years, the Bianco has been more Bordeaux-like. The 2017 is decidedly more exotic in spirit.HK$5,600.00 -

One of the whites of the vintage, the 2020 Château Pape Clément Blanc is based on 62% Sauvignon Blanc, 33% Semillon, 4% Sauvignon Gris, and the remaining 1% Muscadelle, all of which was raised in a mix of new and used oak. This beauty stopped me in my tracks and offers a massive nose of honeyed limes, white flowers, tropical fruit, crushed stone, and orange marmalade. With the vintage’s vibrant sense of freshness, full-bodied richness, a stacked mid-palate, and a fabulous mouthfeel, this truly sensational white is an incredible achievement, and hats off to the team at Pape Clement! It is so finely balanced it is baffling, and the depth and richness is offset with the most dramatic acid and strident minerality I have seen in a wine of this style. There are profound meadow-flower and stone fruit flavour here which enchant the senses but they are marshalled brilliantly by the citrus pith and green apple skin raspiness on the finish. Lemon peel, white flowers, mint and slate are some of the many notes that are woven throughout the 2014 Pavillon Blanc. The interplay of bright, citrus-driven flavors and palate texture is compelling. This is the first vintage in which a portion of the Blanc was aged in 500-liter barrels, a format that helps preserve freshness and tension. The wine is so precise and tightly wound it is hard to imagine it went through 100% mlf, but at the same time, the decision to limit the amount of new oak falls neatly into place. It is developing at such a leisurely pace it is hard to visualise an end point.
