Dark ruby-red colour with good depth. The nose has well-ripened dark-red and black berried fruits with nuances of dark red plums, unfolding an array of dark-red floral perfumes, and hints of dark herbs. A minerally edge is apparent to balance the fruit richness. Lovely detailing. Medium-full bodied, the palate features rich, sweet and plush fruit flavours of dark-red berry fruit and black cherries, along with notes of plums and liquorice. Some dark herb and floral lift provides elegance. The mouthfeel shows very fine-grained tannin extraction and excellent acid freshness and tension. The wine flows along a velvety line, carrying to a long, sustained, sweet fruited, bright finish with acid freshness. This is richer and more complete since last tasting. Fruit from the ‘Dry River Estate’, ‘Lovat’ and ‘Craighall’ sites, fermented with 30% whole clusters to 13.0% alc., the wine aged 12 months in 15% new 300 L and 350 L hogsheads.HK$4,800.00 -

Such a luxuriant, elegant and complex young wine, this is the younger-vine material from Hill of Grace Vineyard (27-year-old vines in 2015). Multidimensional with brown spices, such as cloves and allspice, dried sage, orange peel, red berries, camphor wood and roses. A succulent palate with elegance and focus, offering blue plums and a very fine core of tannin to support such intense, vibrant fruit. Light, espresso-washed chocolate flavors lie across the fine, long and polished tannins that shape the fresh, balanced finish. A great wine that shows the DNA of the Hill of Grace terroir in a humbler mode. Beautiful now, but this will age for more than two decades. Glass-stopper closure.HK$9,500.00 -

Sourced from vines planted in 1899 and 1965, Kaesler's 2015 The Bogan Shiraz aged 15 months in 25% new oak. It's a full-bodied but balanced Shiraz, with big blueberry and blackberry flavors but also savory hints of wood, grilled meat and dried spices. Plush and almost creamy on the palate, it moves easily into a long, velvety finish that picks up hints of plum and licorice. Opaque, bright-rimmed purple. Intense blackcurrant, cherry pie, pipe tobacco and incense aromas are lifted by suave lavender and smoky mineral flourishes. Stains the palate with bitter cherry, cassis and fruitcake flavors that are braced by a core of zesty acidity and given a spicy edge by a snap of black pepper. Shows outstanding definition and impressive depth and finishes extremely long, with powerful dark fruit thrust, smooth, slow-mounting tannins and a whiplash of candied violet.HK$3,500.00 -

It has devoured the oak, there's a deep citrusy core to the palate that really hinges on yellow grapefruit. Torbreck's 2015 The Laird boasts explosive aromas of Christmas spices, ripe plums, vanilla, hickory smoke and maple syrup. It's a big wine, loaded with fruit and oak, full-bodied, rich and velvety, adding hints of toasted coconut and cinnamon streusel on the long, almost dessert-like finish.
