Such a seductive soft perfume to the nose, delicate yet generous aromatics of cherry and rose. The palate is juicy and fresh, charming yet energetic with such crystalline purity and balance. Tannins are smooth but softly textured giving nuance to the flavours where refreshing high toned ripe red and black cherry fruit play alongside mint, dark chocolate and graphite. Clearly powerfully but carefully controlled from start to finish giving such a satisfying overall mouthful and lasting impression. Incredible.HK$4,210.00 -

Tasted blind at the Valandraud vertical at the property, the 2012 Valandraud instantly demonstrated the wide gap in quality between itself and the previous vintage. It is a blend of 88% Merlot and 12% Cabernet Franc matured for 28 months in 100% new oak. It has a primal and concentrated bouquet with intense blackberry, bilberry and graphite aromas that gain intensity in the glass, and yet remain strict and linear. The palate is medium-bodied with brittle tannin that impart a chalky texture. There is plenty of clean and crisp blackberry and raspberry fruit here, pencil lead and a touch of chalk towards the precise and vivid finish. The energy is palpable in this Saint Emilion, a quite stupendous wine from Jean-Luc and Murielle that must stand as one of the best on the Right Bank. This comes strongly recommended, although it still needs plenty of time. Tasted December 2016.HK$12,500.00 -

The local bad boy of Bordeaux, Jean-Luc Thunevin, continues to fashion truly brilliant wines, and his 2019 is no exception. Based largely on Merlot with small amount of Cabernet Franc and Cabernet Sauvignon, the 2019 Château Valandraud is a deep purple-hued beauty offering up a kaleidoscope-like bouquet of black and blue fruits, scorched earth, chocolate, gravelly earth, spicy oak, and sappy flowers. Deep, rich, full-bodied, and wonderfully concentrated, it has insane purity of fruit, brilliant tannins, a stacked mid-palate, and just has everything in the right places. It's up with the top wines of the vintage and a tour de force that readers should snatch up. It shows a very different style than the sexier 2018, but it's every bit as good. It needs 4-5 years of bottle age and will evolve for 2-3 decades.HK$6,200.00 -

The 2014 Brut Coeur de Cuvée impresses with its density and overall energy. Apricot, baked apple tart, spice, chamomile and lightly honeyed accents all meld together. The 2014 is deep and beautifully centered, with tons of poise and impeccable balance. It's a pretty big wine by Vilmart standards, and yet all the elements are so well put together. Revisited from the September 2018 disgorgement, Vilmart's 2014 Brut Premier Cru Grand Cellier d'Or is showing beautifully, wafting from the glass with scents of pear, toasted brioche, white flowers, crisp peach and honeycomb. Medium to full-bodied, vinous and incisive, with superb depth at the core, racy acids and a bright, unerringly precise finish, it's still very youthful—to the extent that I'd love to be broaching a full case a decade from now.HK$4,500.00 -

The NV Brut Grand Cellier is bright, effusive and wonderfully charming. White flowers, chalk, mint and lemon confit give this mid-weight, nervy Champagne tons of energy. All the elements are so nicely put together. I especially like the energy and crystalline purity here. There are a lot of terrific wines in this range, but the Grand Cellier is quintessentially Vilmart. This release is based on 2019, with the addition of reserve wines from 2018. The 2009 Blanc de Blancs Les Blanches Voies is every bit as stunning as it was last year. The combination of the warm year and the natural richness conferred by these 70+- year-old vines yields a powerful, vinous Champagne with tremendous character, depth and the pedigree to drink well for many years. There are 13,053 bottles of Domaine de la Vougeraie's superb 2017 Vougeot 1er Cru Le Clos Blanc de Vougeot, representing a modest yield for this emblematic monopole. Opening in the glass with a pretty bouquet of fresh green pear, peach, mandarin oil and petrol, framed by a discreet touch of nutty new oak, the wine is medium to full-bodied, racy and precise, with a delicate and elegantly tight-knit core of fruit and a long, precise finish. As readers may know, small percentages of Pinot Gris and Pinot Blanc complement Chardonnay in this cuvée.HK$5,148.00 -

Intensely flavored and evolving slowly, combining a restrained sweetness and good salty minerality. Darker in its fruit character than the Clos de Thorey. The wine's strong, spicy, tannic finish calls for more élevage.HK$4,550.00
