Great elegance and finesse already on the perfectly brilliant and aromatic nose shows Pol Roger's 2008 Blanc de Blancs Brut, displaying white and stewed apples with fine citrus flavors and discreet chalky aromas. The palate is dense and citric, as if limes and lemons are squeezed on a chalky rock. The purity, power and intensity is as remarkable, as is the finesse and persistence of the bubbles, the mousse on the palate and the long, persistent finish. Dosed with seven grams per liter, this extraordinary Blanc de Blanc Brut tastes drier than the Réserve Brut, but reveals a perfect ripeness of yellow fruits. The finish is lovely aromatic and intense, but also clear, fresh, firm and absolutely stimulating. Fresh herby citrus and some nice notes of orange peel. Almost peachy on the palate but excellent freshness and intensity, clean cut. Bright and lively and deliciously mouth-watering. Persistent, too. The 2013 vintage is so very Rare, so pure. True to the classical Rare recipe its Chardonnay origins include a luxurious amount of Villers-Marmery and Côte de Blancs Grand Cru fruit, without forgetting the all-important ‘spice’ of Montgueux. The Pinot Noir mix plays with the cool verticality of Verzy and Verzenay, but on a crisp year like this more generosity was lent from for example plush Ambonnay and Bouzy fruit. Intense, shiny bright lemon-green colour. Stunningly refined toasty nose with fine herbal freshness, lemon and birch leaves. There is a lovely vanilla-laden exotic spicy touch to the pineapple and peach fruitiness. Creamy-caressing and salivatingly energetic at the same time. There is a lovely ethereal lightness to the airy whole. Perfectly pure and compact, promising extreme longevity and capacity for majestic complexity.HK$3,600.00 -

The 2016 Blanc de Noirs is aged for 36 months in bottle with a dosage of 3g/L. It has a burnished silvery hue. The well-delineated nose is an absolute delight, presenting scents of orange pith, brioche, toasted pine nuts and a hint of white peach in the background. The palate is well poised with a light walnut opening, quite saline in the mouth and precise toward the finish; a touch of blackberry appears on the aftertaste. Impressive energy and sophistication are clear to see in what might be one of England's best Blanc de Noirs. Highly recommended.HK$2,670.00 -

The 2019 Chardonnay Horseshoe Vineyard is laced with the essence of crushed rocks, white pepper, orchard fruit, white flowers, chalk and mint. It is a bit less forthcoming than the Alpine Chardonnay. Saline notes build into the palate staining finish. This classically austere young Chardonnay just needs time in bottle. Tasted next to the Alpine, the Horseshoe has more mid-palate weight and feeling of phenolic intensity. The differences between the two are remarkable considering the sites are just 400 yards apart. The Horseshoe is planted on Monterey shale, while the soils at Alpine are Purisima, a formation that is about 8 million years younger. Such is the complexity of the Santa Cruz Mountains.HK$7,000.00 -

Vinified in stück and doppelstück (1,200- and 2,400-liter barrels, respectively) and aged on the full lees until the end of July, the 2020 Kiedrich Turmberg Riesling Trocken shows a fascinating, deep, intense and generous as well as complex and aristocratic bouquet of ripe yellow fruits and crushed dark stones. The Turmberg is darker-toned and deeper than the Klosterberg, maybe also even more complex and provided with substantial but elegant fruit. Full-bodied, refined and elegant on the palate, this is a lush, intense and expressive, seriously structured, very long, complex and tensioned Turmberg with a spectacularly long, multilayered and persistently salty finish. Seriously, the Turmberg has never been better than in 2020. For the first time since its re-activation in 2005, the Turmberg premier cru is on grand cru level. Its aftertaste is incredibly dense and compact but also salivating and provided with the energy and expression of a great wine. A Must Buy of the vintage and a Best Buy as well! Magnums preferred. Musky, highly concentrated and densely packed, with its stone fruit and citrus flavors kept under wraps today by stony minerality and strong acidity. Wine Advocate (97)
The latest release, the 2008 Tokaji Essencia from the Royal Tokaji Wine Company, was tasted over a period of three days. It is clearly cut from a different cloth to the 2007, disproving the idea that wines of such extraordinary sweetness conform to type. It is lighter on the nose than the 2007, with freshly cut tangerines, apricot and orange zest. There is a brightness here, a sense of energy. The palate is founded upon energy and tension, a silver thread of acidity that cuts through the layer upon layer of orange zest, Japanese yuzu, tangerine and honey. This is an elegant and you might argue, more reserved Essencia compared to the 2007. The alcohol is slightly higher at a whopping 4%, a relatively easier Essencia to consume compared to the unctuous previous vintage. While it might not achieve the concentration of the 2007, the 2008 Essencia remains an otherworldly feat of nature. I actually shared the remaining bottle with winemakers from Argentina and Portugal in Hong Kong and they became wide-eyed with amazement. That's the magic of Essencia. It might constitute blasphemy, but the freshness means you can enjoy this now, or as my drinking window suggests, wait another 100 years, as temporally fantastical as that sounds.HK$4,000.00 -

The 2021 Skurfberg is pure Chenin Blanc, whole bunch pressed and aged in three old foudres. This has a beautiful bouquet with white flowers, almond and melted candle wax aromas that blossoms in the glass. The palate is very neutral in style, more a textural wine than one with overt flavours; light spicy notes emerge towards a finish that fans out with confidence. The very classy nose has a mineral-infused character underlying its spicy, floral scents.
