It is so finely balanced it is baffling, and the depth and richness is offset with the most dramatic acid and strident minerality I have seen in a wine of this style. There are profound meadow-flower and stone fruit flavour here which enchant the senses but they are marshalled brilliantly by the citrus pith and green apple skin raspiness on the finish. From the Coal and Derwent Valleys (Tas) and the Adelaide Hills; Handpicked and pressed to French barriques (62% new, 38% 1yo) for 8 months. The wine is so precise and tightly wound it is hard to imagine it went through 100% mlf, but at the same time, the decision to limit the amount of new oak falls neatly into place. It is developing at such a leisurely pace it is hard to visualise an end point. From an enclave within the premier cru climat that lost the appellation when the former proprietor brought in topsoil from elsewhere, Girardin's 2017 Puligny-Montrachet Les Folatières is showing beautifully, wafting from the glass with notes of citrus oil, mandarin, pastry cream and toasted hazelnuts. Medium to full-bodied, satiny and enveloping, this is a concentrated, racy and penetrating Pulginy that is well worth seeking out. Pale, bright yellow-green. More about fruit than the foregoing samples from Chassagne-Montrachet, offering aromas of lime zest, tangerine and orchard fruits, with a mineral element giving lift. Penetrating, linear and backward but not spiky on the palate, showing modest thickness but lovely inner-mouth lift to its dense, dusty citrus zest flavors. Doesn't show the texture of the examples from Chassagne but finishes with lovely rising white-peppery length.HK$20,175.00 -

Great elegance and finesse already on the perfectly brilliant and aromatic nose shows Pol Roger's 2008 Blanc de Blancs Brut, displaying white and stewed apples with fine citrus flavors and discreet chalky aromas. The palate is dense and citric, as if limes and lemons are squeezed on a chalky rock. The purity, power and intensity is as remarkable, as is the finesse and persistence of the bubbles, the mousse on the palate and the long, persistent finish. Dosed with seven grams per liter, this extraordinary Blanc de Blanc Brut tastes drier than the Réserve Brut, but reveals a perfect ripeness of yellow fruits. The finish is lovely aromatic and intense, but also clear, fresh, firm and absolutely stimulating. Complete, warm, complex nose and then amazing grip on the finish. Such vice-like grip! Yet with wonderful freshness and life. This has so much to offer. It's like essence of Riesling. Owned by the Thienpont family, the wine made by Nicolas Thienpont. Includes 15% Sauvignon Gris. Only a third of the vines survived the frost. Sauvignon Blanc (85%) clones from the Loire. Fresh herby citrus and some nice notes of orange peel. Almost peachy on the palate but excellent freshness and intensity, clean cut. Bright and lively and deliciously mouth-watering. Persistent, too. The 2016 Blanc de Noirs is aged for 36 months in bottle with a dosage of 3g/L. It has a burnished silvery hue. The well-delineated nose is an absolute delight, presenting scents of orange pith, brioche, toasted pine nuts and a hint of white peach in the background. The palate is well poised with a light walnut opening, quite saline in the mouth and precise toward the finish; a touch of blackberry appears on the aftertaste. Impressive energy and sophistication are clear to see in what might be one of England's best Blanc de Noirs. Highly recommended.HK$2,670.00 -

A pair of warmer, south-facing, biodynamically farmed parcels are the source of this brilliant Sauvignon Blanc. Fermented in deftly handled 85% new wood, it's something of a thiol-driven style, showing quince and passion fruit flavours and top notes of wild flowers. Vinified in stück and doppelstück (1,200- and 2,400-liter barrels, respectively) and aged on the full lees until the end of July, the 2020 Kiedrich Turmberg Riesling Trocken shows a fascinating, deep, intense and generous as well as complex and aristocratic bouquet of ripe yellow fruits and crushed dark stones. The Turmberg is darker-toned and deeper than the Klosterberg, maybe also even more complex and provided with substantial but elegant fruit. Full-bodied, refined and elegant on the palate, this is a lush, intense and expressive, seriously structured, very long, complex and tensioned Turmberg with a spectacularly long, multilayered and persistently salty finish. Seriously, the Turmberg has never been better than in 2020. For the first time since its re-activation in 2005, the Turmberg premier cru is on grand cru level. Its aftertaste is incredibly dense and compact but also salivating and provided with the energy and expression of a great wine. A Must Buy of the vintage and a Best Buy as well! Magnums preferred. The 2021 Skurfberg is pure Chenin Blanc, whole bunch pressed and aged in three old foudres. This has a beautiful bouquet with white flowers, almond and melted candle wax aromas that blossoms in the glass. The palate is very neutral in style, more a textural wine than one with overt flavours; light spicy notes emerge towards a finish that fans out with confidence. It magically gains depth and swagger with aeration - a magnificent wine - Chenin at the peak of its power.HK$4,960.00 -

The very classy nose has a mineral-infused character underlying its spicy, floral scents. Very cool and reserved at the front, but this is an enormously deep and complex wine that has staggering mineral intensity. The lime and oolong-tea freshness effortlessly swallows up the unfermented grape sweetness, as if it didn’t really exist. Some will criticize, saying that this is too radical, but that’s what creates the great excitement! The herbal freshness at the finish is really astounding.
