Bottled after 12 months, this is a very, very pretty vintage with lower yields but also beautiful fruit purity, precision and a wonderful fruit – acid balance. The aromatics are ripe, succulent and opulent showing honeysuckle, white blossom, lemon cordial, dried herbs and lovely white peach and pineapple pastille notes. Nevertheless, the stand out feature on the palate is undoubtedly the textural sophistication, harmony and chalky minerality combined with super tangy acids bursting with lemon rock candy, white peach and crystalline citrus flavours. Simply an incredible intensity with a harmoniously weightless balance combined with a long, piercing finish. Drawn from McLaren Vale, Barossa Valley, Coonawarra, Padthaway and Wrattonbully, this is a seriously focussed and complete Bin 407 with impressive length, and it manages to retain control to the very end. There was no Bin 169 or Bin 707 made in 2020, so this wine (and Bin 389 below) has scooped up the very best Cabernet from the estate, and there is no doubt it is a very special creature indeed. Delicious and savoury, the tannins pinch the palate, and it remains reassuringly dry and firm while on the finish, allowing the palate to open up beautifully on the nose. Containing just a dollop of 4.1% Cabernet Sauvignon, the 2005 Grange is about 85%+ Barossa fruit with the remaining proportions coming from McLaren vale and Coonawarra. It was aged for 18 months in 100% new American oak hogsheads. The nose begins a bit animal with some smoked game, mincemeat and bacon notes emerging over the freshly crushed, sun-warmed blackberries, black currant cordial, earth, black truffles, anise and allspice. Rich and full with very firm very fine tannins and very crisp acid, it gives a long finish layered with coffee, mincemeat and toast. Drink it 2013 to 2025+.HK$20,000.00 -

Made from fruit coming predominantly from the Barossa Valley this year (97%) and containing 2% Cabernet Sauvignon, the 2006 Grange has been added to my list of favorite recent vintages. Deep garnet-purple colored, it’s still a little youthfully mute, offering notes of warm cherries, black currants, anise, coffee and toast with underlying hints of soy, yeast extract, black olives and Indian spices. Tight-knit and solidly structured on the medium to full bodied palate, the concentrated fruit is densely coiled around the firm grainy tannins and very crisp acidity at this stage, but promises something very special in the years to come. It finishes very long, complex and layered with the cedar poking though the fruit purity. Patience is required for this vintage; it should begin opening out around 2016 and drink to 2030+.HK$19,500.00 -

This vintage is a blend of 96% Shiraz and 4% Cabernet Sauvignon, coming from the Barossa Valley, McLaren Vale, Coonawarra and Magill Estate. Very deep inky purple-black colored, the 2013 Grange has a profoundly scented nose of crème de cassis, preserved black plums, blueberry pie and licorice over nuances of baker’s chocolate, smoky bacon and fragrant earth, plus exotic spice wafts of cumin seed, cardamom, fenugreek and star anise. Unfurling and slowly building in the medium to full-bodied mouth with wonderful grace and depth, it reveals an incredible array of ripe black fruit, spice, meat and earth-inspired flavors, with a rock-solid frame to support this beauty (it should easily cellar for 40+ years!), while previously latent flavors emerge fully on the epically long finish, culminating in that ultimate Grange experience. Rich, concentrated and intense, the 2014 Grange delivers exactly what we've come to expect from this Penfolds icon wine. It's full-bodied, velvety in feel and loaded with plummy fruit, framed in vanilla and cedar. Dense, powerful and tannic, it should prove to be long lived, even by Grange standards. Gago doesn't rate the vintage overall that highly, but he says the selection this year for Grange was a bit more stringent and that production levels were just average. I am coming to love (in a big and serious way) the Barossa Shiraz' bottlings from 2020—the year was significantly down in yields, warm and dry, and responsible for wines of muscle, density and gravitas. This 2013 Shiraz St Henri follows in the blockbuster footsteps of the 2010 and 2012. The blend is 96% Shiraz with 4% Cabernet Sauvignon and the fruit sources are far and wide, including a real mix of terroirs: McLaren Vale, Adelaide Hills, Barossa Valley, Clare Valley, Padthaway and Port Lincoln. It spent 12 months in 50+-year-old casks. Deep garnet-purple colored, the youthfully reticent nose is complex, offering loam, aged meat, licorice, tar, scorched earth, fenugreek and cloves over a cherry cordial, blueberry pie and dried mulberries core. The medium to full-bodied palate reveals lovely, understated elegance and depth with a firm backbone of ripe, grainy tannins and many fruit and spice layers emerging on the finish. This is one for the long-long haul and, at a fraction of the price of Grange, should be where the smart money goes for stocking the cellar.HK$4,688.00 -

Opaque, bright-rimmed purple. Intense blackcurrant, cherry pie, pipe tobacco and incense aromas are lifted by suave lavender and smoky mineral flourishes. Stains the palate with bitter cherry, cassis and fruitcake flavors that are braced by a core of zesty acidity and given a spicy edge by a snap of black pepper. Shows outstanding definition and impressive depth and finishes extremely long, with powerful dark fruit thrust, smooth, slow-mounting tannins and a whiplash of candied violet.HK$3,500.00 -

The wine is so precise and tightly wound it is hard to imagine it went through 100% mlf, but at the same time, the decision to limit the amount of new oak falls neatly into place. It is developing at such a leisurely pace it is hard to visualise an end point. In the right hands, great sites produce great wines. Since its inception in 2010, Porseleinberg has been one of the Cape's most exciting reds, but nothing quite prepared me for the transcendent brilliance of this wine. In uenced by some time spent at Domaine Jamet in Côte Rôtie - particularly their use of a submerged cap during fermentation - Callie Louw has made a stunning Syrah, proving his skills as both a farmer and a winemaker. In 2018, the style has shifted, away from power and grip to something more scented and re ned. Focused, nuanced and very delicately oaked, with raspberry and wild strawberry fruit, clove and white pepper spice and textured tannins. Simply world class. 2023-35HK$10,094.00 -

This remarkable site has established itself as one of the world's great Syrah vineyards in less than a decade. Sourced from four blocks totally 4.5 hectares, Callie Louw's stunning red is just short of perfection this year, but is still brilliant, confirming the evolution in style of the Jamet-inspired 2018. Leafy, spicy, rose petal aromas are supported by pure red berry fruit, detailed tannins and the faintest hint of oak.HK$6,280.00 -

The 2019 Cabernet Franc Dolomite has an energetic, tensile nose of wonderfully defined red and black fruit, sage, bell pepper and clove aromas; hints of dried blood emerge with time. The palate is very well balanced, taut and fresh, with supple tannins, a fine bead of acidity, a harmonious, sophisticated finish, and suggestions of black pepper on the aftertaste. This is a brilliant Cabernet Franc from Raats that will age gloriously.HK$1,260.00 -

The 2018 MR de Compostella is a blend of 54% Cabernet Franc, 23% Cabernet Sauvignon, 15% Malbec, 5% Merlot and 3% Petit Verdot. It presents a compelling bouquet of blackberry, charcoal, cedar and tobacco, all showing wonderful delineation and focus. But it is not the most flamboyant on the nose compared to other vintages; this takes its time to open at a stately pace. The palate is medium-bodied with saturated tannins, perfectly judged acidity, a silky-smooth texture and an utterly harmonious, complex finish. Residues of allspice and clove linger on the long aftertaste. Brilliant.HK$3,150.00 -

The 2016 Red contains Carignan for the first time, though Syrah still comprises 80% of the blend, along with Cinsault and Grenache. It has a very detailed bouquet with scents of black plum, blackberry, a touch of gravel and the 100% whole bunch lending a slightly earthy tincture. The palate is medium-bodied with grippy tannin, quite firm in the mouth and maybe more masculine compared to other Syrah-dominated Rhône blends, yet there is wonderful freshness and delineation here. It exerts a gentle grip on the midpalate and those schistous soils impart a wonderful mineralité on the finish. Outstanding.HK$2,800.00 -
