Still in cask at the time of my visit, it has expressive floral and garrigue notes, plus hints of star anise layered over a base of black cherries. An expression of the chalkiest and most mineral-heavy parcel within the Uco Valley, PerSe Gualtallary Inseparable is the latest addition to PerSe’s line-up and is a “good introduction to their portfolio”. Sourced from the central parcel of the Monasterio vineyard, this is a “classical Gualtallary” that made its debut in 2018. Thunderously applauded as an “impressive inaugural vintage”, it was awarded 95 points from Decanter and 94 points from the Wine Advocate.
Hand-picked, fermented in concrete and aged for 14 months in neutral French oak, this is a lifted and refined style of Malbec. Gutiérrez, who finds this wine “hard to resist” (WA), is mesmerized by the “very pure and floral” aromas and a palate that reveals “velvety texture and round tannins with citrus freshness” (WA).HK$1,300.00 -

The 2019 Inseparable comes from the original vineyard planted by the monks in the Monasterio del Cristo Orante in Gualtallary Monasterio at 1,450 meters above sea level. The destemmed grapes fermented in concrete with indigenous yeasts and matured in concrete for one year, different from the first vintage that matured in oak. 2019 was a cold and wet year when they picked in early April in a year with a small ripening, the last vineyard they harvest. The nose has flowers and dark fruit and notes of graphite and earth, and the palate has a strong chalky sensation. It's ripe at 14.5% alcohol and juicy, with good freshness and acidity (pH 3.5 after malolactic and 6.2 grams of tartaric acid). It's a serious and somewhat austere red. 7,700 bottles were filled in March 2020. It was a good yielding year.HK$1,050.00 -

The 2020 Inseparable comes from a warm and dry year, when they picked earlier and achieved a wine with lower alcohol than the 2019 that I tasted next to it, 14% here versus 14.5% in 2019—half a degree that was noticeable. It's juicier and more approachable too, and it feels fine-boned and balanced, with good acidity. Since 2019, the wine is kept unoaked, fermented and matured in concrete for 12 months. It's a more approachable vintage with fine-grained tannins. 6,000 bottles were filled in February 2021, as it was a lower-yielding year.HK$1,395.00 -

I fell in love with the 2019 La Craie as soon as I put my nose in the glass, and the wine stood out like a sore thumb in a flight with the rest of the wines from Per Se. The nose is subtle, elegant, harmonious snf ethereal despite the 14.5% alcohol, This comes from the south-facing slope, the cooler exposition in the southern hemisphere and is the co-fermentation of the field blend of Malbec and Cabernet Franc; depending on the vintage, it can contain some 20% of Cabernet Franc, but they don't even know for sure because the different vintages yield differently depending on the grape. It's perfumed and floral, with the freshness of a forest, notes of graphite and an ethereal quality, not only on the nose but also on the palate, where it's only medium-bodied and has ultra-fine, elegant, fine-grained tannins. It fermented and matured in barrel for 16 months. 1,440 bottles were filled in November 2020.HK$5,815.00 -

The 2020 La Craie was also picked earlier, and the wine achieved lower alcohol (14%) than the 2019 through fermenting the destemmed grapes in their new crylon vats. It matured in used 225-liter barrels for 16 months, the same barrels they have always used from the beginning. It's a less austere expression of LaCraie, more open, aromatic and gentler but keeping the personality, the delicate tannins and the DNA from the place, the large bones with little meat. Great effort for the vintage. 912 bottles were filled in December 2021.HK$6,395.00 -
Iubileus is a profound expression of pure Malbec, too long associated with unimpressive mass-produced wines – the varietal flexes its considerable muscles in this 98 pointed wine. Whilst the 2018 will require patience and time in bottle, its striking quality is clear. Endless layers of minerality and elegant fruit are reticent at this stage but unmistakably present. Hidden amongst the flanks of impeccably fine yet abundant tannins is a core of sensational acidity and perfume simply biding its time to burst forth.HK$3,750.00 -

The 2019 Iubileus comes from Malbec from a plot planted in 2013 on limestone-rich soils with some 40 centimeters of soil, worked organically since it was planted but not certified. It fermented in used rolling barrels with indigenous yeasts, with a maceration of 30 days and matured in used barriques for 16 months. It has moderate ripeness, 14% alcohol and good freshness and acidity, coming through as balanced, harmonious and juicy, with some earthiness, fine, chalky tannins and a long, persistent finish. 1,380 bottles were filled in November 2020.HK$4,905.00 -

The 2020 Iubileus comes from the northern exposure (the warmer exposure in the southern hemisphere) of the hill in Gualtallary where Per Se has its vineyards, where the soils are a little deeper and help to cushion the heat from warmer years like 2020. There is a change in 2020: the wine didn't ferment in barrel like all the previous years but instead was in crylon vats, a sort of inert and very clean material that can be closed. It matured in used 225-liter barrels for 16 months. The wine is open, expressive and floral, with 14.1% alcohol. They achieved harvesting earlier in the warmer and lower-yielding year (around March 10th) to avoid over-ripeness and too much concentration in the wine. It has fine tannins and feels approachable and gentle. 864 bottles were filled in December 2021.HK$4,140.00 -

The Grenache-dominated (90% Grenache and 10% Cinsault) 2019 Ventoux Silica is a beautiful wine that just screams cool-climate Grenache with its more ruby, almost translucent color as well as perfumed red fruits, spicy, floral, and gamey aromatics, more medium-bodied richness, and flawless overall balance. Reminding me of a grand cru Burgundy with its seamless texture as well as outstanding length, it’s going to benefit from 2-3 years of bottle age and drink brilliantly over the following decade.HK$1,700.00 -

There's a single barrel of the 2016 Châteauneuf Du Pape Not For You, which is 100% Grenache from the Les Serres lieu-dit from the oldest vines of the estate. It wasn’t destemmed and spent two years in a neutral barrel. It offers an incredible bouquet of kirsch, blackberries, incense, white flowers, garrigue and spice that develops beautifully with time in the glass. Rich, powerful, full-bodied, and concentrated, it nevertheless glides over the palate with no weight, ultra-fine tannins, and a singular, exotic, lengthy style.HK$5,280.00 -

The Grenache-dominated 2020 Châteauneuf Du Pape Réserve Des Deux Frères, which includes 15% Syrah, is another behemoth of a wine from this brilliant estate that readers will adore. Still again in used barrels, it has plenty of cassis, spicy oak, pepper, violets, and licorice notes to go with a full-bodied, ultra-pure, seamless style on the palate. It’s certainly a bigger, richer wine compared to the Mon Aïeul, with some wood to integrate, yet it too is as seamless, pure, and layered as they come.HK$1,900.00 -

From 70-year-old vines, the 2016 Condrieu Chéry is a bit more concentrated than Niero's Les Ravines bottling, but otherwise, it's similar in its aromas of crushed stone and pineapple. Like the other wines at this estate, it's aged 12 months in a mix of stainless steel (60%) and oak barrels (40%), giving it a rich, slightly oily texture. It's harmonious and long, with pineapple and melon flavors giving way to gingery spice on the finish.HK$2,180.00 -

Subtle notes of baking spices frame hints of tea, olives and raspberries on the nose of the 2016 Cote Rotie la Landonne. A paragon of elegance, it's medium to full-bodied, but silky from start to lingering finish. It's a wine that's pretty much guaranteed to make even the steeliest curmudgeon smile, as it's so bright, ephemeral and luscious. It's not the rich, ripe wine the 2015 is, but it's suave, complex and long.HK$5,800.00 -

The same blend as the 2016, the 2017 Châteauneuf-du-Pape Prestige is another inky colored wine from this estate that has an elegant, mineral-laced, balanced profile that’s very much in the style of the 2017 vintage. Blackberries, raspberries, crushed rocks, ground pepper, and violet notes all give way to a full-bodied 2017 that has terrific purity, no hard edges, building tannin, and a great finish. It's going to hit the ground running and cruise in good cellars for two decades. It has slightly more freshness and minerality than the Reserve cuvée.HK$1,850.00 -

Depending on your local pricing (I've seen it for as little as $12.99 or as much as $20), it should be a terrific value.HK$1,920.00 -

An 80-20 blend of Grenache and Mourvèdre, the 2019 Cotes du Rhone Villages Plan de Dieu Vieilles Vignes is an excellent option for consumers who don't want to spend the extra money for the Saurel family's Gigondas bottlings. The garrigue on the nose is a bit more subtle than normal this year, with the bulk of the aromatics being super ripe cherries and berries. Full-bodied and intense, with a helping of firm tannins that keep the jamminess in check, it finishes dusty and savory, with ample length. This is a big wine, yet one I suspect will mature relatively quickly; drink it over the next 5-6 years.HK$1,190.00 -

Even better (as well as a perfect wine), the 2017 Châteauneuf Du Pape Collection Charles Giraud checks in as a nominal blend of 60% Grenache and 40% Mourvèdre that was brought up in demi-muids. It reveals a deep purple color as well as heavenly notes of blackberry and currant fruits intermixed with loads of cured meats, spice box, Asian spices, and a distinct loamy soil and minerality. Always more structured and powerful than the Reserve Auguste Favier release (no doubt due to the Mourvèdre component), it hits the palate with full-bodied richness, building yet polished tannins, flawless balance, and a great, great finish. Pure perfection in a glass, it’s as good as wine gets. Give bottles 2-4 years and enjoy over the following two decades. Hats off to winemaker Isabelle Ferrando for yet another thrilling wine!HK$5,600.00 -

Saturated ruby. Highly expressive, mineral-accented cherry and dark berry liqueur, cola, licorice and potpourri scents are complemented by an exotic spice nuance. Broad and fleshy in the mouth, offering deeply concentrated black raspberry, boysenberry and bitter cherry flavors that become sweeter and more lively as the wine opens up. Shows excellent clarity and floral lift and finishes extremely long and spicy, with steadily building tannins adding closing grip.HK$5,300.00 -

The 2019 Châteauneuf Du Pape Collection Charles Giraud includes a big chunk of Mourvèdre and is 60% Grenache and 40% Mourvèdre that was partially destemmed and brought up in demi-muids. If offers a deep ruby/plum color as well as a rich, savory, complex bouquet of black raspberries, cassis, toasted spice, cured meats, and graphite. The Mourvèdre really shows in this beauty, and it's full-bodied, concentrated, and structured, yet never loses its seamless, flawlessly balanced profile. It's going to need 4-5 years of bottle age but will have 20-25 years of ultimate longevity. It's another thrilling wine from this estate.HK$6,300.00 -

Limpid ruby-red. A highly complex, mineral-accented bouquet displays Chambord, incense and baking spice qualities, and a suave floral nuance builds with air. Stains the palate with lively, sharply delineated red berry liqueur, lavender and spicecake flavors braced by a core of juicy acidity.
