The amazing, pedal to the metal/full throttle/balls to the wall, sweet 1910 Pedro Ximenez Solera is a dark amber-colored, full-bodied, unctuously-textured beauty that should be sipped and savored slowly and carefully at the end of a meal with a plate of cashews. It is remarkable stuff. The price is not high for what it represents.HK$4,000.00 -

The 2015 Montepulciano d’Abruzzo Vecchie Vigne opens slowly in the glass. Coaxing reveals an elegant mix of fresh mint, red currant, roses and a dusting of spice. It washes across the palate with beautiful finesse, lifted and fresh, showing no sign of its warm vintage origins. Sour cherry and hints of strawberry give way to a delicate web of fine tannin. The 2015 finishes with pretty licorice and pomegranate nuances, leaving behind a lightly structured sensation. What a pretty expression of Pepe Montepulciano, one that grows in volume the longer it spends in the glass. I foresee very good things here. Of note, the Pepe family was so happy with the balance of the 2015 that they decided to hold back 80% of the production for late release.HK$11,000.00 -

Ruby red with garnet highlights, intense and persistent fragrance; the bouquet is intense, fruity and persistent, with notes of dried flowers, spice, liquorice and maraschino cherries. The palate is stylish and velvety; almost creamy, with compact tannic structure that balances nicely with the alcohol. Great structure, complex, elegant and well-balanced with a long finish. Opulent fruit. Ideal for roasts, game, strongly flavoured dishes and mature cheese. Thoughtful wine.HK$2,000.00 -
Jeb Dunnuck (95)
A blend of 85% Monastrell and 15% Cabernet Sauvignon made with consulting advice from Chris Ringland, the flagship 2014 Triga comes from very old vines and was aged 22 months in a mix of new Burgundy and Bordeaux barrels. Triga is a Roman word for a three-horse chariot team and is a reference to the three separate vineyards used for this cuvée. It has a ripe, decadent, modern style as well as a huge nose of black raspberries, cassis, espresso roast, and vanilla. Full-bodied, gorgeously layered, and supple, with moderate acidity and sweet tannin, I’d happily drink this big, blockbuster styled beauty over the coming 10-15 years.HK$3,742.00
