Composed of 66% Cabernet Sauvignon, 32% Merlot, 1% Petit Verdot and 1% Cabernet Franc, yields for the grand vin in 2017 were 43 hectoliters per hectare, and it was aged in 60% new oak. It came in at an alcohol of 13% and an IPT of 68. Deep garnet-purple colored, the 2017 Cos d'Estournel needs a little coaxing to unfurl, revealing beautiful expressions of preserved plums, boysenberries, blackcurrant pastilles and wild blueberries with hints of Indian spices, menthol, lilacs and mossy tree bark plus a compelling suggestion of iron ore. Medium to full-bodied, the palate has a solid backbone of firm, grainy tannins and well-knit freshness supporting the tightly wound blue and black fruits layers, finishing long and fragrant. This wine will need a good 5-7 years in bottle before it begins to blossom and should go on for at least another 40 years. I expect this wine to be a blockbuster of a head-turner when I come back and taste it at 10 years of age!HK$6,877.00 -

The 2018 Cos d'Estournel is a blend of 74% Cabernet Sauvignon, 23% Merlot, 2% Petit Verdot and 1% Cabernet Franc, aged in 50% new oak barriques. The alcohol weighs in at just over 14.5%. Sporting a deep purple-black color, it needs a lot of swirling to begin to unlock a powerful nose of crème de cassis, stewed plums, wild blueberries and chocolate-covered cherries, followed by nuances of Sichuan pepper, star anise, tree and clove oil, plus a waft of charcoal. The full-bodied palate is densely packed with taut, muscular black fruits and earthy layers, framed by super firm, ripe, grainy tannins and seamless freshness, finishing very long and wonderfully earthy. A very impressive behemoth, this is going to need a good seven to 10 years to truly show its stuff and should drink for a good 40 years and beyond.HK$8,605.00 -

Juicy and broad on entry, offering bitter cherry, black raspberry and baking spice flavors and a sweetening vanilla flourish. Even inkier-colored than the Sabarotte, the 2015 Cornas les Eygats is another single vineyard release that comes from a site located on the northern edge of the appellation. Aged in 50% new French oak (the balance is in once-used barrels), it offers sensational notes of plums, blueberries, crushed violets, pen ink and barbecue smoke in an utterly profound, decadent, layered, heavenly profile. From a cooler parcel of pure granite soils, the 2018 Cornas Les Eygats is probably the most classic Cornas in the lineup (although these all have plenty of Cornas character) with its more mineral, iron, and almost bloody style. Loaded with massive amounts of blue and black fruits, violets, and crushed rock nuances, this full-bodied, multi-dimensional, seamless Cornas has polished tannins, flawless balance, and a monster of a finish. A particularly floral expression, with lavender and violets on the nose among the apricot fruit. Full-bodied, but still fluid on the palate, this has a real intensity and freshness, a sense of tension and minerality. Long finish that's not overburdened by oak. This has a sense of straightness and direction despite the breadth on the palate and open aromatic display. Very well balanced, finishing floral. Wonderful florality on the nose, perfumed and full of black cherries. Great freshness here, such good juice content, immediately so alive and fresh, there is a real buzz to this wine with some creamy/chalky edges that are so refreshing. Great personality with vibrant fruit. Rich and layered, super concentrated but with this fun lively aspect. Tannins are chewy and ripe because of the weather but there's a great lift and sense of life to this. I really like it. A blend of 62% Cabernet Sauvignon, 27% Merlot, 9% Cabernet Franc and 2% Petit Verdot.HK$2,480.00 -

The 2020 Château d'Yquem a blend of 75% Sémillon and 25% Sauvignon Blanc. It has 135 grams per liter of residual sugar and a pH of 3.79. Pale lemon-gold colored, citrus and baking spice notes emerge slowly from the glass, rising to offer well-defined scents of candied ginger, orange blossoms, allspice, and almond tart, leading to a flamboyant core of peach cobbler, ripe, juicy pineapple, jasmine tea, and apple butter with a waft of saffron. The palate is full-bodied and characteristically rich, yet possesses impressive tension and therefore stunning harmony. Layers of exotic spices and fragrant white flower accents fill the palate, leading to a long finish with lingering chalk and mineral nuances. It’s a showy Yquem that is gregarious in youth but is reserving that extra something for those with the patience to wait twenty years or more.HK$7,000.00 -

Depth and power through the mid palate, good quality tannins, this is classically restrained St Estèphe power, with savoury yet juicy black fruits. Living up to its potential En Primeur, one to look out for, and a strong 2nd wine that beats out many 1st wines in the vintage. The second is clean and precise on the nose, offering honeycomb, lanolin, crushed rocks and light yellow flower aromas that gain intensity with aeration. The palate is very well balanced, and a fine bead of acidity cuts through the intense botrytized fruit. Very harmonious and poised, with impressive intensity on the finish. A marvelously complete wine, the 2015 is racy and silky on the palate, yet also has tremendous freshness. Bright red cherry, blood orange, white pepper, spice and dried flowers build into the super-expressive finish. The 2015 has been nothing less than stunning the three times I have tasted it so far. Reminding me of the 2016, the 2019 Domaine De Chevalier checks in as 65% Cabernet Sauvignon, 30% Merlot, and 5% Petit Verdot that was brought up in 35% new French oak. Its vivid purple color is followed by a classy bouquet of crème de cassis, damp earth, tobacco leaf, and spring flowers. With medium to full-bodied richness, stunning purity of fruit, silky tannins, and a good spice of acidity, this beautiful, classic, quintessential Chevalier will need 5-7 years of bottle age yet keep for 4-5 decades in cold cellars.
