Created in 1876 to satisfy the demanding tastes of Tsar Alexander II, Louis Roederer’s Cristal has since become a symbol of luxury all around the world. Produced only during the best years, it’s made from 60% Pinot Noir and 40% Chardonnay, the grapes coming from 45 of the finest lieux-dits in the region. 2013 was a late bloomer, with flowering only taking place in July after a cool spring. The summer was ideal with long periods of dry and warm weather. One third of the wine is aged in oak and there’s no malolactic fermentation. Vincenzo Arnese: Packed with elegant yet powerful aromas of ripe orchard trees that merge with brioche and dry cookies. This is a harmonious and well-defined Champagne with integrated residual sugar and astonishing acidity. Divine! Pedro Ballesteros Torres MW: Lemon coloured with a pink hue. Over the years, I have had the chance to taste many vintages of Cristal Rosé, a Champagne that needs bottle age to be at its very best. I suspect that will be the case here as well. Just about as good as it gets, the 2012 Cristal Rosé is a magical effort based on 56% Pinot Noir and 44% Chardonnay. It’s a powerful, medium to full-bodied, incredibly textured rosé offering a huge amount of salty, chalky minerality as well as awesome notes of white cherries, orange blossom, caramelized apples, and toasted bread. It shows the ripe, rounded richness of the 2012 vintage yet has bright, racy acidity, perfect balance, and a great, great finish. Dense, creamy and powerful, the 2013 captures all the qualities of the vintage, specifically the interplay of rich fruit from the warm summer and cooler inflections from a year that started late and ended late with a rare October harvest. Today, the 2013 is deep and beautifully seamless, but it is also young – far too young to be at its best. Dosage is 6.5 grams per liter, a bit less than for the standard bottlings, a decision taken to balance longer aging on the lees and a bit more residual sugar that is always left in the magnums after fermentation. The 2007 Cristal Rosé opens with the most captivating, extraordinary bouquet imaginable. Sweet, exquisite and beautifully layered in the glass, the 2007 is intense yet weightless, with extraordinary overall balance and remarkable finesse. Today, the 2007 Cristal Rosé is a wine of pure seduction. There is little doubt the 2007 is a great Cristal Rosé in the making. This is the first vintage in which all of the fruit was farmed according to biodynamic principles. According to winemaker Jean-Baptiste Lécaillon, biodynamic farming has brought increased aromatic presence in the fruit and also given the Pinot a bit more intensity than normal, so much so that in 2007 the blend is 55% Pinot Noir and 45% Chardonnay as opposed to the 60/40 split that has been more typical over the years. In 2007, the fruit was picked in August, which is also unusual, but bud break got off to an early start, so the growing season turned out to be longer than the classic 100-day period that is typical from bud-break to harvest. The palate has a vivid mousse that carries very bright, vibrant lemon notes to the nose, backed and supported by a chalky depth. That line of acidity is luminous, scented, pure, lasting and rather linear, but it is balanced by notions of riper fruit, ripe Mirabelle plum, even apricot. The wine is full-bodied and classically crafted, building incrementally on the palate and displaying full-bodied richness, sweet tannin, and a potential to age for 25-30 + years. I love the 2012, but honestly the 2013 just has the edge, because it is just as concentrated and full of fruit but acidity and floral nuance balances out the richness. The second perfect score I have given to a Hobbs Beckstoffer To Kalon Vineyard Cabernet Sauvignon (the other was the 2002), the 2013 is as spectacular as his 2002 was. There are 638 cases of this massive wine that comes across like a first-growth Pauillac. Lead pencil shavings, cedar wood, blueberry and blackberry liqueur as well as hints of forest floor and tobacco leaf are all present in this fragrant, sumptuously textured, full-bodied, massively rich yet sensationally well-balanced Cabernet Sauvignon. It has a finish of well over 55 seconds. This is amazing work, and interestingly, I believe Hobbs was the first to offer a Beckstoffer To Kalon Vineyard designated Cabernet Sauvignon.HK$30,000.00 -

Deep garnet-purple in color, the nose of the 2018 Cabernet Sauvignon Beckstoffer To Kalon Vineyard starts off with soft-spoken scents of ripe red and black plums, cassis, black raspberries and mulberries, followed by gentle wafts of cedar and pencil lead and finally bursting out with Sichuan pepper and hoisin notes. The medium to full-bodied palate is opulent, plushly textured and brimming with spicy red and blackberry layers, going beautifully perfumed on the long finish. Paul Hobbs mentioned that he backed off on the new oak this year, aging the wine in 85% new French oak (as opposed to 100%). I love this more elegant, nuanced expression a lot. 688 cases were made.HK$15,300.00 -

The 2019 Syrah Sonoma Hillsides is once again the star of this range from Pax Mahle. Rich and exotic, with notable depth, the Hillsides is quite a bit brighter than the other Syrahs in the portfolio. Red cherry, plum, pomegranate, mocha, spice, leather and tobacco abound. The whole clusters are present, but nearly buried by the sheer intensity of the fruit. As always, the Hillsides is a blend taken from several sites, done with 100% whole clusters and aged in concrete. Every time I taste the Hillsides, I think the same thing: why doesn't Pax Mahle treat all his Syrahs this way?HK$3,900.00 -

The 2021 Syrah Sonoma Hillsides is towering and statuesque in bearing from the very first taste. I don’t think I have ever tasted a Sonoma Hillsides with this much finesse, this much purity. A wine of vertical energy, the Sonoma Hillsides possesses tremendous depth from start to finish. In many vintages the Hillsides leans towards a darker expression of Syrah. The 2021, on the other hand, is marked by more of a red/purplish fruit profile, with bright floral and citrus overtones that confer freshness. Once again, Pax Mahle made one of the truly epic wines of the year. His Sonoma Hillsides has been one of the very finest wines in Northern California for a number of years now.HK$5,450.00
