What a magnificent bouquet for this Dom Pérignon 2012! Pastry, a hint of smoke and autolytic notes provide a compelling counterpart to eager yet elegant aromas of citrus (lime, tangerine and kumquat) joined by those of fresh fruit, herbs, liquorice, and menthol. There is even a refreshing note of ivy. The palate is tense, vibrant, and very fresh despite its impressive density, which meets its match with an unending finish. This 2012 incarnates the very essence of Dom Pérignon with such a concentrated degree of intensity, along with a capacity for ageing, that it is surely destined for a second life in a P2 edition.HK$8,600.00 -

Yet, it’s long and powerful, with a sharp minerality. Tight and precise. Reminds me of bottles from the 1980s, such as 1988. It really takes off. Disgorged October 2021. The 2008 Dom Pérignon is fabulous, but quite remarkably, it was even more open when I tasted it a year ago. Bright, focused and crystalline in its precision, the 2008 is going to need a number of years before it is at its best. Lemon peel, white flowers, mint and white pepper give the 2008 its chiseled, bright profile. Several recent bottles have all been magnificent. What I admire most about the 2008 is the way it shows all the focus, translucence and energy that is such a signature of the year, and yet it is also remarkably deep and vertical. In other words, the 2008 is a Champagne that plays in three dimensions.HK$15,300.00 -

The 2004 Champagne Plentitudes 2 is a stark contrast to the 2003 vintage and offers a more compact and linear expression, with energetic tension and persistence. Composed of 38% Chardonnay and the rest Pinot Noir, the nose is flush with wet stone reminiscent of great Chablis, along with white nectarine and white flowers. The palate runs seamless with a super-fine mousse, vibrant peach orchard fruit, and a silky mineral texture. This may well prove to be the longer-lived of the two wines. A wine of pure and total pleasure, the 2004 Dom Pérignon Rosé is explosive and hedonistically rich, with tons of pure texture from the 28% still Pinot in the blend. The Dom Perignon Rosé 2006 is simply amazing. Notes of raspberry, spices and mint jump from the glass in a seductive combination. This shows incredible depth of fruit with strawberry, cherry and phenolics. Full-bodied and layered with an incredible, three-dimensional element to the wine. This is so transparent and dynamic with dark fruit, yet it remains vivid and bright. Refined and precise, it goes on and on. Really savory, fresh and incredibly pinot-noir-like. The 2009 Dom Pérignon Rosé marks a return to a richer style of Rosé following the more ethereal 2008 Rosé. Sweet red cherry, blood orange, spice and pomegranate all build in a creamy, sensual DP Rosé that hits all the right spots. Over the last few years, Chef de Caves Vincent Chaperon and his team have lowered the still Pinot portion of the Rosé down to about 10% from a high of 28% or so, reached around 2004 and 2005. In 2009, the Rosé gains considerable textural presence from the generosity of the year. It is a superb Champagne. I preferred it to the 2008, which was also part of this tasting.HK$15,000.00 -

The 2006 Dom Pérignon Rosé is every bit as captivating as it was last year, maybe even more so. At times powerful, but in other moments finessed, the 2006 constantly changes in the glass, revealing a different shade of its personality with every taste. Perhaps most importantly, the 2006 seems to have gained a level of precision and pure sophistication it did not show last year, when it was quite a bit less put together. Back then, the 2006 was a wine of tremendous potential; today that potential is starting to be realized. Quite simply, the 2006 Dom Pérignon Rosé is a magical Champagne. Don’t miss it.HK$16,920.00 -

A mind-blowing wine. This is super subtle and intense with aromas of peaches, light strawberry and cream. Also shows rose petal and cooked peaches. Medium to full body, with ultra-fine tannins that feel like fine silk. The finish goes on for mintutes. It floats across the palate. Given the price of some Chilean icons these days, Coyam remains one of the best value reds in the country, right up there with the country's top red blends. Based on Syrah and Carmenère with the remaining 19% made up of Cabernet Sauvignon, Garnacha, Malbec, Carignan, Tempranillo and Mourvèdre, this is wonderfully detailed and complex. Racy and mineral, with scented oak, mint, wild herb and sweet spice undertones and a core of inky damson and black cherry fruit. 2022-30HK$1,580.00 -

The 2020 Coyam is a blend of 38% Syrah, 37% Carménère, 8% Cabernet Sauvignon, 5% Carignan, 4% Garnacha, 4% Mourvèdre, 2% Petit Verdot, 1% Malbec and 1% Tempranillo from the Los Robles vineyard in Colchagua. It was aged for 18 months, 75% in barrels and the rest in foudres and eggs. A rich purple in the glass. The complex nose features nuanced aromas ranging from blackberry to blueberry and currant with hints of cedar and spice. In the mouth, it’s juicy with a grippy texture and delicate, concentrated but relaxed tannins before the lengthy finish. It seems that the healthy biodynamic vineyard was able to withstand the warmth of 2020. An extremely well-made wine that handled the conditions with aplomb.HK$1,300.00 -
