A barrel sample of the 2005 Shiraz Admiral’s Reserve ratchets up the level of concentration significantly. An inky/purple color is accompanied by a fabulous creme de cassis-scented bouquet revealing notions of smoked meats, creosote, blackberries, and acacia flowers. This deep, powerful, rich, muscular Shiraz will benefit from 2-3 years of bottle age, and should drink well for 10-15.HK$700.00 -
The 2005 Vintage of this magnificent Shiraz is fully mature and stunning. Layer upon layer of smoke and wild forest fruits dominate the nose while the palate shows excellent richness and density. Still, balance is the name of the game and with 12 years behind it, this is drinking beautifully.HK$1,200.00

The 2005 Roennfeldt Road Shiraz is very deep purple-black in color. It presents and incredible array of pronounced spice, earth, floral and savory aromas: blackberry preserves, dried mulberries, coffee, grilled duck, vanilla, cloves, fenugreek, violets and dried rose petals plus some shavings of dark chocolate. Very full and very rich in the mouth, at 17.5% declared alcohol this is not a wine for the faint hearted. Though youthful it’s already multi-layered and the opulent flesh is well supported by a good backbone of crisp acid and a high level of velvety tannins. The finish is very, very long. This Shiraz has great balance for the alcohol and although the wine leaves a bit of heat in the finish it neither overpowers nor detracts from the layers of complex flavors. Possessing the foundation and stuffing to age, it should drink well from 2014 to 2025+.HK$4,460.00 -

The 2005 Shiraz “Attunga 1865” is sourced from ungrafted vines planted in the Clare Valley in 1865. It spent 25 months in 100% new French oak hogsheads and was bottled unfined and unfiltered. Opaque purple/black, it reveals an ethereal bouquet of crushed rocks, acacia flowers, espresso, mocha, black cherry, and blackberry. This leads to a powerful, intense, yet elegant wine with a very long, seamless finish. This beautifully balanced effort will excite tasters over the next 25 years. Kilikanoon’s winemaker is the talented Kevin Mitchell. The house specialty is Shiraz but Mitchell does equally well with Riesling, Cabernet Sauvignon, and Grenache.HK$5,000.00 -

Containing just a dollop of 4.1% Cabernet Sauvignon, the 2005 Grange is about 85%+ Barossa fruit with the remaining proportions coming from McLaren vale and Coonawarra. It was aged for 18 months in 100% new American oak hogsheads. The nose begins a bit animal with some smoked game, mincemeat and bacon notes emerging over the freshly crushed, sun-warmed blackberries, black currant cordial, earth, black truffles, anise and allspice. Rich and full with very firm very fine tannins and very crisp acid, it gives a long finish layered with coffee, mincemeat and toast. Drink it 2013 to 2025+.HK$20,000.00 -

The 2005 Heinrich, a blend of Grenache, Mourvedre, and Shiraz (15%, 30%, and 55% respectively), reveals a dark purple hue along with a sweet perfume of crushed rocks, blueberries, creme de cassis, creosote, vanilla, and spice. It is a full, earthy effort to consume over the next 7-8 years.HK$1,000.00 -

The 2005 Les Amis, sourced from a 100+-year-old vineyard, is 100% Grenache aged for 18 months in new oak. Remarkably fragrant, it emits full-throttle aromas of spice box, kirsch, wild raspberry, and blackberry liqueur. Plush on the palate, it reveals layers of rich, red and black berry flavors, ripe tannin, and a 60-second, pure finish. Although it can be admired now, the wine merits 6-8 years of further bottle aging to reveal all of its splendors. This sensational effort could easily masquerade as Pegau Cuvee de Capo on human growth hormone.HK$1,000.00 -
