The 2018 La Salvación is the only white produced by César Márquez in his personal project. It's pure Godello from two plots—one plot in Arganza regrafted from old Mencía to Godello 12 years ago and some 15% to 20% from another plot in Villafranca where there are some Godello old vines in between the Mencía. The destemmed grapes fermented and matured in 500-liter oak barrels, where the wine rested with the lees without bâtonnage for around one year. The wine was a little closed and shy and needed some time to take off—it's subtle, elegant and insinuating. In the future, he might do a single-vineyard white once he finds the right plot. The palate is serious and soil-driven, tasty, almost salty, with very focused flavors. 2018 delivered a good crop, and 1,358 bottles were produced. Each vintage has been different (2015 had flor, 2016 was sharp, and 2017 was a little more exuberant), and this is the most serous and complete to date. It should age nicely in bottle.HK$1,780.00 -
The 2005 Vintage of this magnificent Shiraz is fully mature and stunning. Layer upon layer of smoke and wild forest fruits dominate the nose while the palate shows excellent richness and density. This is sensational with blackberries, blueberries and mineral. Extremely floral, too. Full-bodied but so seamless and refined with polished tannins that just melts into the wine. The flagship of the Clarendon Hills line, this comes from a patch of 80-year-old vines that winemaker Bratasiuk claims routinely provides his best fruit. The 2004 is a stunner, yielding up scents of flowers and spice, framed by hints of vanillin oak. It's dense and amply textured in the mouth, packed with wonderfully expressive blackberry and blueberry fruit, then shows layers of rich tannins on the finish that leave no doubt this needs time in the cellar to show its best. Deep garnet-purple in color, the 2010 Astralis is still quite primary eliciting aromas of black plums, blueberry compote and blackcurrant liqueur with a savory and baking spice undercurrent plus a fragrant whiff of violets. Very structured, fine and complex in the medium to full-bodied mouth, this wine is revealing much more than when I first tasted it a year ago and is now showing layer upon layer of black fruit preserves, mocha, toast and spices before finishing with great length. Following the new classification of wines, the 2019 Villa de Corullón is a Vino de Villa (village), produced with grapes from 6.71 hectares divided into 200 small plots they own on slate-rich soils at 500 to 950 meters in altitude. It's 91% Mencía, 1% Alicante Bouschet and 8% white grapes from old vines (50 to 90 years old) that are organically and biodynamically farmed, and the wine will be certified in the coming years. The partly destemmed grapes fermented in oak vats with indigenous yeasts for 43 days and matured in barriques and foudres for 10 months. It has a "moderate" 13.5% alcohol, the lower part of the range, as they aim for 13.5% to 14% alcohol in the finished wines. This is a great blending exercise, as the wines are blended mostly before putting it in barrel. It's a subtle and elegant Corullón, with great balance and freshness; Ricardo talked about some tannins that are very fine. It's a fluid vintage for this bottling, a little herbal, versatile and complex. It seems to have more character than the Moncerbal than it has had in other years. This could be one of the lightest and most elegant vintages of Corullón, with a different texture from the rest of the 2019s. There were 20,344 bottles and some other formats produced.HK$2,000.00 -

The 2011 Reserva is produced from their cooler vineyards grown at altitudes of 800-900 meters, from an assortment of small plots planted before the 1930s. The Tempranillo is mixed with other grapes totaling almost 10% in this vintage, half of it white Albillo and a significant amount of Bobal among others. They selected the grapes from the plots they thought would provide more freshness, especially in a warm year like 2011. The full-clusters fermented in open stainless steel pools where they are foot-trodden. The wine is transferred to barriques and put in the cold cellars where they age slowly and go through malolactic the following spring. This is a serious wine where the aromas are subtle and more soil-driven and austere, slowly revealing notes of violets and damson cherries with great depth. The palate is medium-bodied, with refined, silky and fine-grained tannins and a superb sensation of harmony. This is really outstanding for a year such as 2011. The 4,000 bottles produced were filled in May 2014. Drink 2015-2020.HK$4,506.00 -

The 2014 Reserva is the winery's flagship wine, a wine produced to showcase the vineyards from the village La Aguilera next to Aranda de Duero in the province of Burgos. It's produced with the field blend dominated by Tempranillo from old vineyards in different parts of the village picked and fermented together. The full clusters were foot trodden and fermented in concrete vats with indigenous yeasts, and malolactic was very slow (it took eight months in 2014!) in oak vats. The élevage was extended to 31 months in French oak barrels of different sizes and ages. The wine has an herbal twist that provides freshness, and the oak feels very integrated. It has a magical perfume, in a great classical Ribera del Duero, with more body and structure; it has almost the same freshness as the 2013 but with more depth, compensated by complexity. It opens up nicely in the glass. It should age for a very long time in bottle, but it's already approachable. 9,850 bottles and 167 magnums were filled in May 2017.HK$4,500.00 -

Quite different from the 2015 was the 2016 Reserva, a red from a cooler year with good yields, so they were able to increase production of this wine over twofold and increase the quality! It took some seven months to complete fermentation, and the élevage in barrel lasted some 29 months. It has an incredible nose, violets and something musky, intriguing, complex and nuanced, mysterious and difficult to define, with some notes reminiscent of soy sauce. The palate is seamless and with terrific balance, a silky texture and very fine but chalky tannins. This is an amazing Ribera del Duero. 18,834 bottles and 519 magnums produced. It was bottled in April 2019.HK$3,200.00 -

2017 was a low-yielding year, so I also tasted the 2018 Reserva, their flagship red wine that wants to be a representation of the village of La Aguilera—fine, serious and elegant. It's 95% Tempranillo with the remaining grapes found interplanted in their oldest vineyards at an average of 880 meters in altitude on limestone, clay and sandy soils. All the clusters ferment together with indigenous yeasts in concrete, where they are foot trodden, and malolactic was carried out very slowly (11 months) in oak barrels where the wine matured for a total of 27 months. It has a somewhat shy nose but is very elegant. The wine was recently bottled, and that can make it a little closed and subtle, and it clearly improves with air as it sits in the glass. It's still young, and the palate reveals lots of energy; the flavors are very pure and the wine precise and delineated. The tannins are very fine and provide for a chalky texture and an almost salty twist in the finish. This is very in line with the 2016. 15,250 bottle and 101 magnums produced. It was bottled in February 2021.HK$3,788.00 -

Displaying a similar color as well as personality and depth, the 2001 Cabernet Sauvignon Ashmead exhibits a more scorched/roasted character to its nose, sweeter, more pliable and open-knit flavors, and nearly as much aging potential as the cooler vintage conditions produced in 2002. 2016 The Eye of Ra is a 100% Shiraz, using 100% French oak and all of the fruit comes from Ebenezer. This wine is made from the finest parcel of fruit that Ben has ever seen in his vineyard. Outstanding aromatics lead the way and the palate is nothing short of spellbinding. The finish has epic freshness and the tannins are like nothing I have encountered before from the great Glaetzer portfolio. The Eye of Ra is all about power countered with impeccable restraint and I can still recall all of its flavours several weeks later. It is one of a number of wines that I have seen lately which signal a new and fascinating epoch for Barossa Shiraz. I followed this wine over three hours that evening and it never stopped evolving in the glass. This celestial wine made a huge impression on me and it is hard for me to see how this wine can be bettered and so I am overjoyed to give it a perfect score.HK$8,500.00 -
Beautiful aromatics from this exceptional Shiraz come after over a decade of bottle age. While normal sized bottles may have gone past their prime by now, in Magnum this wine has thrived. The 2005 Roennfeldt Road Shiraz is very deep purple-black in color. It presents and incredible array of pronounced spice, earth, floral and savory aromas: blackberry preserves, dried mulberries, coffee, grilled duck, vanilla, cloves, fenugreek, violets and dried rose petals plus some shavings of dark chocolate. Very full and very rich in the mouth, at 17.5% declared alcohol this is not a wine for the faint hearted. Though youthful it’s already multi-layered and the opulent flesh is well supported by a good backbone of crisp acid and a high level of velvety tannins. The finish is very, very long. This Shiraz has great balance for the alcohol and although the wine leaves a bit of heat in the finish it neither overpowers nor detracts from the layers of complex flavors. Possessing the foundation and stuffing to age, it should drink well from 2014 to 2025+.HK$4,460.00 -

This superb Reserva from the textbook, cooler climate 2016 vintage is one of the best young wines I have ever tasted from Carlos de la Fuente and Peter Sisseck. Marrying Tinto Fino with 20% Cabernet Sauvignon, aged in 40% new wood, this comes from a parcel with a very high limestone content, which adds freshness on these warm slopes. Medium to deep garnet colored, the 2012 Hill of Grace Shiraz is a little reticent on the nose to begin, opening out to a somewhat paradoxically tantalizing Black Forest cake, beef dripping, fertile loam and tree bark nose with hints of black pepper, Marmite, bay leaves, eucalyptus, licorice and baker’s chocolate. The medium to full-bodied palate is a wonderfully intricate mélange of mineral, savory, dark fruits and spice layers, framed by velvety tannins and refreshing acidity, finishing epically. This is a truly great Hill of Grace that has just entered the first stage of its drinking window and should continue to develop beautifully over the next 25+ years.HK$16,695.00 -
