A barrel sample of the 2005 Shiraz Admiral’s Reserve ratchets up the level of concentration significantly. An inky/purple color is accompanied by a fabulous creme de cassis-scented bouquet revealing notions of smoked meats, creosote, blackberries, and acacia flowers. This deep, powerful, rich, muscular Shiraz will benefit from 2-3 years of bottle age, and should drink well for 10-15.HK$700.00 -

From six-year old vines cropped at a mere 2.3 tons of fruit per acre, the brilliant 2001 Shiraz is a candidate for the finest wine ever made on Kangaroo Island. It boasts an opaque purple color in addition to a complex perfume of blackberry liqueur intermixed with licorice, smoke, charcoal, and a hint of wood. Full-bodied as well as remarkably measured, elegant, and restrained for its power and mass, this brilliant achievement somehow walks the tightrope between excessive power and overly processed politeness. It combines intense flavor with tremendous finesse – an extremely difficult accomplishment. The good news continues as there are 2,500 cases of this brilliant Shiraz. Jeb Dunnuck (97)
The flagship from a 7-acre parcel in the estate vineyard, the 2016 Cahors Le Pigeonnier is another Pomerol look-alike with its beautiful bouquet of black cherries, blueberries, damp earth, white chocolate, and exotic spices. As with all these 2016s, it’s a ripe, powerful, opulent wine that doesn’t pull any punches, yet always stays balanced, elegant, and remarkably fresh. Made from 100% Malbec aged two years in new French oak, it builds beautifully with time in the glass, has a deep, layered mid-palate, and a blockbuster finish. It’s possibly the finest Cahors I’ve ever tasted and would pass undetected in a blind lineup of top Napa Cabernets. While it’s no doubt beautiful today, I suspect it will develop even more nuance and complexity with 3-4 years of bottle age and keep for 15-20 years.HK$5,750.00
