Even inkier-colored than the Sabarotte, the 2015 Cornas les Eygats is another single vineyard release that comes from a site located on the northern edge of the appellation. Aged in 50% new French oak (the balance is in once-used barrels), it offers sensational notes of plums, blueberries, crushed violets, pen ink and barbecue smoke in an utterly profound, decadent, layered, heavenly profile. From a cooler parcel of pure granite soils, the 2018 Cornas Les Eygats is probably the most classic Cornas in the lineup (although these all have plenty of Cornas character) with its more mineral, iron, and almost bloody style. Loaded with massive amounts of blue and black fruits, violets, and crushed rock nuances, this full-bodied, multi-dimensional, seamless Cornas has polished tannins, flawless balance, and a monster of a finish. There are two special cuvées from this estate. Looking first at the 2018 Cornas Cuvée Jana, it tastes like the essence of Cornas with its meaty, bloody aromas and flavors of scorched earth, ground pepper, rare steak, iron, cedar, and dark, almost blue fruits. Tight, tannic, and concentrated on the palate, this full-bodied effort packs incredible intensity and power yet stays lively, elegant, and weightless. It's a brilliant, brilliant Cornas, yet certainly not for those seeking instant gratification. It actually reminds me slightly of the incredibly age-worthy wines from Domaine Clape, and I suspect it will have a similar evolution. Hide bottles for 7-8 years and enjoy over the following two decades.HK$4,621.00 -

This certainly is a deep, broody exotic expression of Cabernet Sauvignon that is more reminiscent of a cool vintage Napa Valley Cabernet Sauvignon than anything from Bordeaux or the Cape. Opened and tasted over 4 to 5 hours, the wine hits its stride surprisingly quickly with plenty of perfumed purple flowers, violets, bruleed black berries, baked blueberry crumble, crème de cassis and a pleasing note of mocha and vanilla pod spice. Initial notes of kelp and maritime seashore salinity quickly give way to a more weighty, sensual melange of black berry compote nuances and hints of cherry kirsch liquor. While this wine certainly shows all the deft elegance and finesse we associate with the 2017 vintage, it also displays a certain extra gravitas, power and weight of fruit concentration combined with great poise, density and a seamlessly textured mineral graphite finish. This is a dark horse that will drink well on release and age deceptively well for 20+ years.HK$2,400.00 -

The 2016 Cabernet Sauvignon is blended with 7% Malbec and 6% Cabernet Franc and spent 22 months in seasoned French oak. It has a classy bouquet of expressive red berry fruit, cedar and light undergrowth aromas that leans toward the Left Bank. The palate is medium-bodied with great sapidity right from the start. The tannins are extremely fine here, and the finish fans out gloriously with just enough bite to tempt you back for another sip. The 2019 Cabernet Franc Dolomite has an energetic, tensile nose of wonderfully defined red and black fruit, sage, bell pepper and clove aromas; hints of dried blood emerge with time. The palate is very well balanced, taut and fresh, with supple tannins, a fine bead of acidity, a harmonious, sophisticated finish, and suggestions of black pepper on the aftertaste. The 2018 MR de Compostella is a blend of 54% Cabernet Franc, 23% Cabernet Sauvignon, 15% Malbec, 5% Merlot and 3% Petit Verdot. It presents a compelling bouquet of blackberry, charcoal, cedar and tobacco, all showing wonderful delineation and focus. But it is not the most flamboyant on the nose compared to other vintages; this takes its time to open at a stately pace. The palate is medium-bodied with saturated tannins, perfectly judged acidity, a silky-smooth texture and an utterly harmonious, complex finish. Residues of allspice and clove linger on the long aftertaste. Brilliant.HK$3,150.00 -

Very few recent South African releases have been as eagerly awaited as this 2018 red from the old Cordoba property on the flank of the Helderberg. And it doesn't disappoint in the slightest. Cabernet Franc-centred, with 24% Merlot and 16% Cabernet Sauvignon, the new crescendo is a beautifully refined, detailed red from 21-year-old vines. Violet and cut grass aromas lead into a palate that is fresh, bright and comparatively low in alcohol with filigree tannins, subtle wood, fine tension and the focus and balance to age. This is an exceptional vintage for Vincent Paris. 100-year-old vines. No destemming. Five-day cold maceration, then fermented with wild yeasts.
