The base cuvée is the 2016 Cabernet Sauvignon, which is 82% Cabernet Sauvignon, 7% Cabernet Franc, 6% Merlot, 4% Petit Verdot, and 1% Malbec sourced all from Rutherford. It has a classic, Saint Julien-like bouquet of crème de cassis, tobacco lead, damp earth, and spice that gives way to a full-bodied, concentrated, textured Cabernet that hits all the right marks. The top Rubicon release has a touch more elegant and precision, but this isn't far off. Drink this stunner any time over the coming 20 years or more.HK$3,980.00 -

Tasted from bottle, Drouhin's 2017 Beaune 1er Cru Clos des Mouches Blanc is showing very well, offering up aromas of fresh pear, Meyer lemon and grapefruit zest that are still quite youthfully marked by a generous application of buttery new oak that experience shows will integrate nicely with a little age. On the palate, the wine is medium to full-bodied, satiny and textural, with racy underlying acids, a fragrant core of fruit and a long, penetrating finish. This is a very elegant, aromatic rendition of this emblematic Drouhin cuvée.HK$7,151.00 -
Jasper Morris Inside Burgundy (94-97)
Pale lemon colour. The power is immediately apparent on the nose, but in a good way. A wine for longer elevage before bottling and then worth the wait in bottle thereafter. This has all the expected volume of white fruit while retaining impeccable balance. Adds depth with time in the glass, before reaching quite a saline finish. A very youthful but impressive Clos des Mouches. I recently enjoyed a stunning bottle of the 2017, and this could very well match it in due course. Tasted: November 2021HK$6,363.00 -

Cask sample. Pale garnet. Sweet nose and rather less freshness than the Boucherottes. Just a little less precise. But all may come right with bottle age.HK$2,580.00 -

The 2017 Beaune Village really over-performs this year, bursting with aromas of cherries, raspberries, licorice, orange rind, grilled ceps and peonies. On the palate, the wine is medium to full-bodied, succulent and enveloping, with fine depth and concentration, powdery structuring tannins and a long, sapid finish. Combining substance with structural charm, this will offer a broad drinking window. As ever, this cuvée is a blend of premiers crus Boucherottes and Epenottes with the lieux-dits Prevolles and Beaux Fougets, so the raw materials are unusually serious for a communal bottling.HK$1,750.00 -
James Suckling (99)
This is beautifully polished with firm, dusty tannins to the blue fruit, as well as chocolate and cedar character. Some much earthier character, too, from mushrooms to bark. Forest flowers. Perfumed. It’s full-bodied with round tannins and a soft, creamy finish. Some iron and iodine to this. So attractive at the finish. From biodynamically grown grapes. Better after 2023.HK$8,333.00 -

The 2017 Scarecrow Cabernet Sauvignon is stunning. Seamless on the palate, with remarkable depth and richness, the 2017 has so much to offer. Black cherry jam, blackberry, chocolate, licorice, spice and menthol build in a rich, sumptuous Cabernet Sauvignon that hits all the right notes. Best of all, the 2017 will drink well with only minimal cellaring. It is without question one of the wines of the vintage.HK$21,000.00 -

Pure perfection in Napa Valley Cabernet Sauvignon, Scarecrow’s 2018 reveals a dense purple hue as well as an incredible bouquet of pure crème de cassis, toasted spices, chocolate, darker currants, and graphite. This carries to a full-bodied, dense, off-the-charts sexy 2018 that has the vintage’s purity and freshness backed up by flawless balance, a layered mouthfeel, and building yet elegant tannins. This cuvée is hard to resist given its texture and wealth of fruit, but it will ideally be given 3-5 years and should evolve for 30 years or more.HK$23,888.00 -

Pure perfection from Napa Valley, the 2019 Cabernet Sauvignon is, as always, all Cabernet Sauvignon from an incredible site in Rutherford that spent 21 months in 70% new French oak. Incredible aromatics of crème de cassis, darker currants, smoke, tobacco, and assorted floral notes all define the bulk of the bouquet, and it’s full-bodied, with a multi-dimensional, layered texture, ultra-fine tannins, and perfect balance. This is such a magical site, and this wine consistently checks in with the greatest wines of the world. It already offers pleasure yet should have 30 years of overall longevity. Hats off to winemaker Celia Welch and the team at Scarecrow.HK$22,900.00
