Only the most subtle notions of wet oakmoss, citrus peel and yeast escape on the shy nose. This is absolutely honed and taut, but time in the glass allows salty miso and crushed fennel aromas to shine through. A glint of ripe pear joins in but the utter, precise, stony freshness will take a while to unravel. This is indeed a wine to be treasured for decades. Drink 2025–2050.HK$2,475.00 -

Tasted from bottle, Drouhin's 2017 Beaune 1er Cru Clos des Mouches Blanc is showing very well, offering up aromas of fresh pear, Meyer lemon and grapefruit zest that are still quite youthfully marked by a generous application of buttery new oak that experience shows will integrate nicely with a little age. On the palate, the wine is medium to full-bodied, satiny and textural, with racy underlying acids, a fragrant core of fruit and a long, penetrating finish. This is a very elegant, aromatic rendition of this emblematic Drouhin cuvée.HK$7,151.00 -

Pale lemon colour. The power is immediately apparent on the nose, but in a good way. A wine for longer elevage before bottling and then worth the wait in bottle thereafter. This has all the expected volume of white fruit while retaining impeccable balance. Adds depth with time in the glass, before reaching quite a saline finish. A very youthful but impressive Clos des Mouches. I recently enjoyed a stunning bottle of the 2017, and this could very well match it in due course. Tasted: November 2021HK$6,363.00 -

Cask sample. Pale garnet. Sweet nose and rather less freshness than the Boucherottes. Just a little less precise. But all may come right with bottle age.HK$2,580.00 -

The 2017 Beaune Village really over-performs this year, bursting with aromas of cherries, raspberries, licorice, orange rind, grilled ceps and peonies. On the palate, the wine is medium to full-bodied, succulent and enveloping, with fine depth and concentration, powdery structuring tannins and a long, sapid finish. Combining substance with structural charm, this will offer a broad drinking window. As ever, this cuvée is a blend of premiers crus Boucherottes and Epenottes with the lieux-dits Prevolles and Beaux Fougets, so the raw materials are unusually serious for a communal bottling.HK$1,750.00 -

Complete, warm, complex nose and then amazing grip on the finish. Such vice-like grip! Yet with wonderful freshness and life. This has so much to offer. It's like essence of Riesling. The finish is crawling with (good) micro-organisms somehow. A rich panoply of wild-flower flavours without being at all heavy.HK$2,000.00 -

Stony savor swings as a vestige alongside the zesty citrus on the wine's closed nose. The palate starts off tight and taut, right now it is all sleek and stony. Time in the glass allows glimpses of what still lies deeply buried: a rich, profound yeastiness reverberating with peppery, salty depth. This is an astonishingly concentrated package that, may just be a time capsule that survives us. Drink 2030–2050.HK$1,900.00 -

A gentle hint of ripe tangerine peel immediately hits the nose. With more air, this unfolds to include notions of ripe blood orange and Mandarin, too. The palate comes in with steely concentration that speaks as much of absolute freshness as of glorious ripeness. The flavors are pristine, contoured by immense raciness. There is something steely and stony at the very core that radiates utter freshness. Drink by 2050.HK$1,855.00
