Medium to deep garnet-purple in color, the 2016 Clos de Sarpe (composed of 85% Merlot and 15% Cabernet Franc) is a little closed to begin, opening out to reveal provocative Black Forest cake, Chinese five spice and cigar box notes with nuances of sandalwood, kirsch, rose hip tea and pencil shavings. Another perfect wine from this brilliant estate is the 2016 Châteauneuf-du-Pape, which matches the otherworldly 2007. A classic blend of 60% Grenache, 30% Mourvèdre and 10% Syrah brought up all in old foudre, this beauty's deep purple color is followed by a mammoth bouquet of kirsch liqueur, black currants, blueberries, Asian spices, and garrigue. Full-bodied, concentrated, and powerful, it nevertheless is as graceful as a ballerina on the palate and has ultra-fine tannins, a silky, seamless texture, and a finish that just won't quit. It is quite simply a stunning wine and a towering achievement from the Mondavi family. Powerful, ample and sweeping in stature, the 2016 boasts breathtaking intensity in all of its dimensions. I see the pure, vibrant fruit of the 2013, but with more finessed tannins that add to the wine's feeling of real sensuality. Bright, precise and finely sculpted with remarkable persistence and perfectly integrated tannins, the 2016 is positively stellar - not to mention one of the wines of the vintage.HK$15,000.00 -

The Cortonesi 2016 Brunello di Montalcino Poggiarelli draws its fruit from a vineyard planted in the 1970s and replanted in part during the 1990s. Its fruit has made this designate wine since 1998, and like many of the Selezioni (and the Brunello cru expressions), this wine shows a pretty mineral character that lifts above the bright red fruit. It's absolutely true that these special sections from Montalcino are always recognized by their terrain or soil-adjacent aromas. In this case, I can smell those flinty or gravel-like tones from the schistous Galestro rocks. That special aromatic signature is followed by dark fruit and balsam herb, firm tannins and bright acidity. This is a limited 4,000-bottle release.HK$3,288.00 -

The first bottle of 2016 Doisy-Daëne was corked. The second is clean and precise on the nose, offering honeycomb, lanolin, crushed rocks and light yellow flower aromas that gain intensity with aeration. The palate is very well balanced, and a fine bead of acidity cuts through the intense botrytized fruit. Very harmonious and poised, with impressive intensity on the finish. This is a marvelous Sauternes. Excellent. Tasted blind at the annual Southwold tasting.HK$1,800.00 -

The 2004 Dom Pérignon is a totally different beast. It is the product of a very long and cool growing season marked by heavy summer rains in some sectors of the region and then ideal conditions through to harvest. After a brutally torrid 2003, the vines responded by setting a huge crop. In fact, 2004 remains the most abundant vintage in the history of Champagne. The best wines, though, well, they have always impressed with their laser-like cut and focus. That’s exactly what comes through in the 2004 Dom Pérignon. Tasted from magnum, the 2004 shows all the linear energy and crystalline precision of the year, but with that extra magic that comes from fermentation and longer aging in the big bottle. The 2004 has long been one of my favorite Dom Pérignons. From magnum, it is especially captivating.HK$12,045.00 -

The 2004 Champagne Plentitudes 2 is a stark contrast to the 2003 vintage and offers a more compact and linear expression, with energetic tension and persistence. Composed of 38% Chardonnay and the rest Pinot Noir, the nose is flush with wet stone reminiscent of great Chablis, along with white nectarine and white flowers. The palate runs seamless with a super-fine mousse, vibrant peach orchard fruit, and a silky mineral texture. This may well prove to be the longer-lived of the two wines. A wine of pure and total pleasure, the 2004 Dom Pérignon Rosé is explosive and hedonistically rich, with tons of pure texture from the 28% still Pinot in the blend. A prodigious effort, the 2016 Chateauneuf du Pape Les Hautes Brusquieres Cuvee Speciale was yet to be bottled during my June visit. It offers up sweet floral aromas, hints of thyme and rosemary and bold cherry fruit. Full-bodied and creamy-velvety in texture, it's a hugely seductive mouthful of wine that I found difficult to spit. If it emerges from the bottling process looking like this, buyers will have huge smiles on their faces.HK$2,580.00 -

The ripe and ultra-fresh aromas are from the darker side of the fruit spectrum while including plenty of spice, warm earth, menthol and plenty of sauvage character. There is both fine detail and a beguiling texture to the equally broad-shouldered and even more mineral-inflected flavors that possess even better complexity on the balanced and hugely long finish. Unusually, this appears to be just a bit less structured than the Bressandes and should also be approachable on the younger side if that's your preference.HK$5,200.00 -

The 2016 Barolo Pajana is ample, powerful and resonant, with terrific body and a real sense of expansiveness that builds with time in the glass. Sweet spice, citrus and floral overtones add brightness to this attractive, mid-weight Barolo. The 2016 is deep and yet also tannic. I would prefer to cellar it for at least a few years.HK$4,990.00 -

Quite different from the 2015 was the 2016 Reserva, a red from a cooler year with good yields, so they were able to increase production of this wine over twofold and increase the quality! It took some seven months to complete fermentation, and the élevage in barrel lasted some 29 months. It has an incredible nose, violets and something musky, intriguing, complex and nuanced, mysterious and difficult to define, with some notes reminiscent of soy sauce. The palate is seamless and with terrific balance, a silky texture and very fine but chalky tannins. This is an amazing Ribera del Duero. 18,834 bottles and 519 magnums produced. It was bottled in April 2019.HK$3,200.00 -

The palate is well balanced with good depth, a little creaminess coming through towards the finish with touches of orange zest and dried apricot developing. This has caught up with the Folatières since it lagged behind when tasted from vat. Tasted at Flint Wines Domaine Dujac tasting in London.HK$15,800.00 -

Dark red-ruby. Aromas of blueberry, blackberry, violet and peppery herbs, the latter no doubt partly due to the use of 15% whole clusters for the fermentation; winemaker Alejandro Vigil noted that the stems were fully ripe in this vineyard in 2016). Tactile, juicy and suave, with its seamless flavors of blueberry, violet and bitter chocolate showing considerable finesse and building, palate-staining length. Vigil makes 8,000 cases of this Cabernet Franc, half of them for the local Argentina market. Very nicely balanced wine, not hugely complex but with real nobility of texture for the price.HK$1,320.00
