On the palate, the wine is medium to full-bodied, satiny and textural, with racy underlying acids, a fragrant core of fruit and a long, penetrating finish. It has a well-defined bouquet, hints of white chocolate infusing the citrus fruit, and just a touch of honey giving away the warmth of the growing season. The palate is well-balanced with a discreet spicy opening that dovetails into a pure, quite tensile midpalate. The 2013 Insignia (their 40th vintage) is a blend of 88% Cabernet Sauvignon, 5% Petit Verdot, and the rest Merlot, Malbec and Cabernet Franc. This wine is aged 24 months in 100% new French oak barrels, and the production can vary from just over 10,000 cases to nearly 20,000 cases in a very abundant vintage. There were 12,300 cases produced in 2013, and this vintage of Insignia is certainly going to turn out to be one of the great ones. The wine offers a stunning inky blue/purple color, a gorgeous nose of blueberry and blackberry liqueur, pen ink, graphite, new saddle leather and barrique. The wine has fabulous concentration, a full-bodied, multi-layered mouthfeel, and tremendous finish with moderate tannin. It’s interesting to note that the Phelps winemaking staff had been gradually reducing the amount of Merlot in this wine over recent vintages. The 2013 should hit its peak in 5-7 years and last for 35-50.HK$13,000.00 -

This certainly is a deep, broody exotic expression of Cabernet Sauvignon that is more reminiscent of a cool vintage Napa Valley Cabernet Sauvignon than anything from Bordeaux or the Cape. Opened and tasted over 4 to 5 hours, the wine hits its stride surprisingly quickly with plenty of perfumed purple flowers, violets, bruleed black berries, baked blueberry crumble, crème de cassis and a pleasing note of mocha and vanilla pod spice. Initial notes of kelp and maritime seashore salinity quickly give way to a more weighty, sensual melange of black berry compote nuances and hints of cherry kirsch liquor. While this wine certainly shows all the deft elegance and finesse we associate with the 2017 vintage, it also displays a certain extra gravitas, power and weight of fruit concentration combined with great poise, density and a seamlessly textured mineral graphite finish. This is a dark horse that will drink well on release and age deceptively well for 20+ years.HK$2,400.00 -

"Lighter and lighter" is the motto at Klein Constantia these days, according to Matt Day. The latest, world-class release of Vin de Constance certainly doesn’t lack sweetness at 165 grams or even concentration, but it has a freshness that's reminiscent of Vouvray or Barsac. Subtly wooded in 50% new barrels, it unfurls layers of citrus, toast and tarte tatin, with a drizzle of honey and vivid acidity and palate length. Bravo!HK$3,160.00 -

The 2017 Lafleur-Petrus is elegant, polished and wonderfully refined from start to finish. Everything just falls into place effortlessly. Aromatic, sculpted fruit gives the 2017 its sense of regal beauty and total finesse. Beautifully lifted and precise, it is framed by gentle, silky tannins. Small red berries, mint, blood orange, spice and licorice develop in the glass, but it is the wine's cashmere-like softness that impresses most. Tight, intense, even clenched, it's in need of several years' cellaring before it becomes truly enjoyable to drink. Still full-bodied and rich on the palate, it adds hints of chocolate on the long, velvety finish. I tasted many superb 2017s, but only a few that are viscerally thrilling and emotional. The 2017 Lafleur is one of a handful of wines that ascends into the stratosphere. Rich and exotically beautiful, the 2017 possesses off-the-charts intensity, tremendous aromatic depth and an impossibly long finish. A rush of dark plum, licorice, leather and mocha leaves the last impression in a wine I can only describe as: eternal. The 2017 spent about nine months in oak, 30% new. The Three Graces of Le Macchiole are Messorio, Scrio and Paleo (Merlot, Syrah and Cabernet Franc, respectively). Of these three top-tier releases, my favorite is the 2017 Paleo. This is an upright and direct expression of the grape that carefully sheds some dusty or mineral aromas before opening the way for determined black fruit, charred meat, spice and cured tobacco or cigar. There is quite a bit of oak, but it works beautifully against the natural intensity and rich concentration of the hot vintage. More unexpected are those pretty tones of lilac, blue flower and aniseed that add to the detailed rendering and complexity of the bouquet. This wine won my heart.HK$3,700.00 -

Hailing from Le Mesnil-sur-Oger, a prime Champagne region, this well-crafted wine bears the signature of Champagne Le Mesnil, a revered cooperative with unmatched commitment to quality. The vintage 2013 is 100% Chardonnay, meticulously hand-picked and vinified to produce a Blanc de Blancs of unparalleled strength and finesse.
Matured on lees for a noteworthy period, the wine showcases the unique terroir of Côte des Blancs, offering a mesmerising dance of creamy mousse, lush ripe fruit with hints of toasted almonds and brioche. The taste evolves on the palate, culminating in a long and magnificent finish.

Brilliant wine that continues to impress three years on from the En Primeur tasting, with a creamy but restrained texture, precise black fruits with a spicy undertow. By this point Carmes had the highest percentage of Cabernet Franc on the Left Bank, and had really started to establish its own identity. It was also using a full 40% whole bunch winemaking, choosing only the ripest stems to include in the fermentation tanks, adding a twist of salinity on the finish and ensuring a dip of around 1% in potential alcohol levels at picking (this is a hot site close to the city centre). Owned by Patrice Pichet since 2011, with Guillaume Pouthier joining as director in 2012 - whose experience in the Rhône meant he was not afraid to use stems in winemaking, something traditionally shunned in Bordeaux. This wine shows the success of that approach, giving personality and poise. Needs another few years for the austerity to soften further.HK$10,200.00 -

Created in 1876 to satisfy the demanding tastes of Tsar Alexander II, Louis Roederer’s Cristal has since become a symbol of luxury all around the world. Produced only during the best years, it’s made from 60% Pinot Noir and 40% Chardonnay, the grapes coming from 45 of the finest lieux-dits in the region. 2013 was a late bloomer, with flowering only taking place in July after a cool spring. The summer was ideal with long periods of dry and warm weather. One third of the wine is aged in oak and there’s no malolactic fermentation. Vincenzo Arnese: Packed with elegant yet powerful aromas of ripe orchard trees that merge with brioche and dry cookies. This is a harmonious and well-defined Champagne with integrated residual sugar and astonishing acidity. Divine! Pedro Ballesteros Torres MW: Lemon coloured with a pink hue. Like a blanc de noirs, with cherries and white fruit aromas. Balanced and suave. Goes from less to more, with an exceptionally long and complex finish. Amanda Barnes: Appealing notes on the nose of pastry dough and apple tart that are very open. On the palate there’s beautiful concentration with lingering savoury notes. Minerally and sophisticated. Tasted from magnum, the 2013 Cristal Rosé is ravishing. Dense, creamy and powerful, the 2013 captures all the qualities of the vintage, specifically the interplay of rich fruit from the warm summer and cooler inflections from a year that started late and ended late with a rare October harvest. Today, the 2013 is deep and beautifully seamless, but it is also young – far too young to be at its best. Dosage is 6.5 grams per liter, a bit less than for the standard bottlings, a decision taken to balance longer aging on the lees and a bit more residual sugar that is always left in the magnums after fermentation. Readers who can find the 2013 in magnum will experience one of the greatest thrills in wine.HK$11,570.00 -
