The 2009 Dom Pérignon Rosé marks a return to a richer style of Rosé following the more ethereal 2008 Rosé. Sweet red cherry, blood orange, spice and pomegranate all build in a creamy, sensual DP Rosé that hits all the right spots. Over the last few years, Chef de Caves Vincent Chaperon and his team have lowered the still Pinot portion of the Rosé down to about 10% from a high of 28% or so, reached around 2004 and 2005. In 2009, the Rosé gains considerable textural presence from the generosity of the year. It is a superb Champagne. I preferred it to the 2008, which was also part of this tasting.HK$15,000.00 -

Not a lot of wines leave me speechless from start to finish. But this wine did! Still deep, dark, almost inky in color, the wine offers off the hook aromas of smoked truffle, cigar box, tobacco, black and dark red fruit with spice box, tobacco leaf and smoke filled nuances. Deep, rich, full-bodied and with this incredible blend of elegance, power and sensuality, this wine is going to age for decades. Always a rough blend of 60/40 Pinot Noir and Chardonnay from estate vineyards, it has a toasty, yet pure bouquet of stone fruits, rising bread, white flowers, and toasted bread, as well as a terrific sense of chalky minerality. While it’s not built around sheer richness and power (à la Krug), it’s perfectly balanced, has a fine, fine mousse, and shines for its class and purity. Bravo! A wine of sublime delicacy and finesse, the 2009 Cristal Rosé is simply magnificent. The 2009 is surprisingly refined, silky and nuanced for a wine from a warm vintage. The red and floral-infused overtones are quite attractive, but it is the wine's exceptional balance that places it among the best new releases of the year. Over the years, I have had the chance to taste many vintages of Cristal Rosé, a Champagne that needs bottle age to be at its very best. I suspect that will be the case here as well. This wine is only made in the best vintages, and the next release is 2011. The 2009 Amarone della Valpolicella Classico is a mysteriously ephemeral wine but also a very powerful one at the same time. The alcohol content is 16.5%, and this is one of the most important indicators used when deciding that a vintage is good enough to make Amarone. This wine shows a deep, dark color that is reinforced by thick density and smoky aromas that lift from the glass, followed by exotic spice, campfire ash, camphor and plenty of dark plummy and raisiny fruit. The bouquet reveals outlying aromas of bitter chocolate and crushed slate. In the mouth, the wine offers plenty of ripeness and fruity sweetness, but there is enough supporting structure here to absorb both the sugar and the alcohol. There is a sweetly fragrant earthy note on the long and silky finish.HK$19,500.00
