Henri Boillot
The Boillot family established themselves in the region in 1885, and Henri represents the fifth winemaking generation, with his son now overseeing the production of the reds.
The winery is located on the “other” side of the RN74 in an estate that includes the Damy cooperage. This impressive facility affords Henri far more space then if he were couched in some mediaeval maison in one of the villages, which is mandatory when you have such an all-embracing portfolio of wines.
Henri Boillot produces domaine and negociant wines from Burgandy’s most renowned growing areas. Henri is a 5th generation vigneron in the Cote d’Or. Wines of Maison Henri Boillot are produced in a cellar in Meursault and are vibrant and full of character.

(Boillot picked this fruit first in 2015, as acidity levels can quickly plunge on this hot calcaire soil): Subdued musky aromas of stone fruits and hazelnut. A fat, oily bomb of stone fruits on the palate, but this thick, silky wine is framed and lifted on the very long back end by dusty stone.HK$3,165.00 -
Vinous (90-93)
Bright yellow. Deeper-pitched on the nose than the , Puligny-Montrachet Les Perrières, offering aromas of apricot, mandarin orange, smoke and hazelnut. Fine-grained and dense but still a bit hard-edged and in need of further élevage. A bit drier and more aggressive on the end than on the front half, finishing with a hint of menthol. This fruit was harvested very early with sound natural acidity. (Boillot will not bottle a Puligny-Montrachet Folatières or a Caillerets owing to frost losses.)HK$11,210.00 -

First picked, as you have to these days. Mid lemon yellow. The bouquet shows softer fruit up front, something of a cashmere texture on the palate, with some ripe citrus, fair acidity but the balance of the wine is more fragile. Drink from 2029-2033. Tasted Oct 2024.HK$7,255.00 -
Vinous (91-94)
(a domain wine): Pale, bright yellow. Oily peach nectar, hazelnut oil and Poire William on the nose and in the mouth. Round and plush but with a firm dusting of stony minerality energizing the middle palate. Manages to be both voluptuous and chewy, giving the wine striking precision for its size. The superb, slowly mounting finish is subtle and long. These 48-year-old vines produced just 35 hectoliters per hectare, due in part to some millerandage.HK$2,355.00 -

Middling deep yellow. A little oak on the nose, but otherwise high class predominantly orchard fruit. This is more nuanced than the Folatières, entirely white fruit and a good balance between the clay and the minerals. An excellent and persistent finish. Drink from 2029-2036. A lemon colour. This is more on the stones than a heavyweight on the nose. On the palate there is a wealth of ripe citrus, with the start of some yellow peaches, but the stones definitely dominate. Don't miss! Outstanding The beautifully refined nose offers up spiced notes of honeysuckle, apple and white peach. The rich and relatively full-bodied flavors possess the same refined mouth feel telegraphed by the nose before concluding in a clean, dry, long and seriously complex finish. On the palate, it's medium to full-bodied, ample and textural, with lively acids and a long, precise finish. Produced from 1.15ha of domaine-owned vines in the lieux-dits of Les Enseignères, Les Charmes and Les Houillères. The blend this year shows surprising depth of flavour, beginning with fresh citrus notes and an accent of flinty minerality on the initial attack. The maturation is evident in the spice notes that develop on the palate, but the wine never loses its elegance or balance, and there is enough substance to carry it through a pleasantly lingering finish.HK$11,260.00 -

Outstanding A subtle but not invisible application of wood sets off cool aromas of various flowers, pear, apple and orange peel. There is very good volume to the succulent, intense and agreeably textured flavors that culminate in a bone-dry, palate coating and lingering finale where a hint of youthful austere slowly emerges. Outstanding Moderate reduction is enough to push the underlying fruit to the background. By contrast, there is excellent freshness and intensity to the solidly concentrated medium weight flavors that coat the palate with dry extract while delivering impressive length on the balanced, youthfully austere and citrus-tinged finale. This is a really good Puligny villages and even though it's more powerful than usual, it remains stylish and refined. One to buy plus it should age gracefully.HK$4,750.00 -

5 Star Wine. Mid yellow in colour. A light biscuity touch alongside a properly floral bouquet, this is remarkably stylish while evidently also suggesting full ripeness. Several waves of flavour with the fruit becoming ever fresher the further back it goes, finishing on a very pure white fruit, scarcely marked by the oak at all. A brilliant village Puligny. Outstanding Ripe and very fresh aromas are composed by notes of green apple, citrus rind and mineral reduction. There is excellent intensity to the stony and attractively textured medium weight flavors that deliver very good length on the chiseled and nicely dry finale. Deep ruby-red. Wild aromas of blackberry, game, mocha, violet and smoke, with a suggestion of roasted ripeness. Rich and stuffed with fruit but showing less early personality than the Chevrets, as the tannins are not yet integrated. With its youthful bitterness and firm mineral cut, this is almost painful today in the middle palate. Really explodes with aeration, though, finishing with vibrant, palate-saturating flavor and superb richness. This reminded me of a grand cru from the Cote de Nuits. Crop levels here and in the Chevrets were between 32 and 35 hectoliters per hectare in 2005. Boillot emphasizes that Volnay was the most successful Cote de Beaune village in 2005, as it was in the outstanding '99 vintage as well.HK$1,215.00 -

Vinous - Stephen Tanzer (91-93)
Bright red-ruby. Rather brooding aromas of cassis, blackberry, smoke and licorice are pure and discreet. Surprisingly rich on entry, then lush and seamless in the middle, but with very good acidity framing and lifting the black fruit and game flavors. The powerful, rising finish features building tannins and a distinct thick-skinned character. The old vines in Boillot's parcel were strongly affected by millerandage, which largely explains this wine's extra measure of texture and concentration. Boillot noted that his 2011s generally have 3.8 to 4 grams per liter of acidity following the malos, which is quite healthy for the vintage.HK$5,255.00
