The vast and diverse wine regions of France, each with its own unique terroirs, grape varieties, and winemaking techniques, are a treasure trove.

A glowing pale yellow. Super-concentrated if not yet very yielding bouquet. Extra tension here, certainly some depth, but perhaps more in class than power. That will change with time – the class with remain but the depth will expand. White fruit, tension, some youthful bitters, but keeping itself to itself for the moment. Really very long finish though. (13.5% alcohol; 30% vendange entier): Dark red-ruby. Wild aromas and flavors of black raspberry, earthy spices and mocha, with an element of menthol freshness providing lift. Round, fat and highly concentrated; boasts outstanding richness and depth but will need extended aging to deliver on its inherent complexity. The crop level here was just 25 hectoliters per hectare, or less than the Chambertins. Most promising today on spicy, rising, edge-free finish, which saturates every square millimeter of the palate with salty minerality and dark fruits. This wonderfully silky, classy Bonnes-Mares is from stony, whiter soil on the Chambolle side of the cru.HK$17,175.00 -

Here too the nose is quite restrained with its admirably pure aromas of red cherry, dark currant, spice and earth along with notes of violet and lavender. I very much like the sense of underlying tension to the succulent, indeed even juicy, medium weight plus flavors that exude a subtle salinity on the tautly muscular and firm finish that flashes just a hint of youthful austerity. This isn't quite as complex as the Chambertin but it's close and it may well close the gap over time as this is also very clearly structured for mid to even longer-term keeping.HK$4,460.00 -

Bright, dark red. Deep, brooding, very closed nose of black fruits, licorice, violet, spices and pepper. Layered, dense and concentrated, with classic cool-year inner-mouth tension and energy. The black fruit flavors are given a distinctly taut quality by strong framing acidity. Best today on the rising, penetrating, extremely long finish, which saturates the palate with remarkably sweet, harmonious, fine-grained tannins and leaves the salivary glands quivering. (aging in two new Remond barrels): Bright, dark red. Deep, brooding aromas of black cherry and smoke are currently muted by a bit of reduction. Then wonderfully sweet, silky and seamless on the palate, conveying an incredibly suave texture and great inner-mouth perfume to the complex flavors of dark berries, earth and smoky oak. Very classy juice; Boillot told me he used the same precise barrique for the Volnay Champans and that he plans to use more Remond barrels in the future. The rising, subtly spicy finish shows uncanny energy and a lighter touch than the Clos de Bèze. A knockout.HK$6,725.00 -

More purple and less ruby compared to Beze. A greater depth of fruit, more layers to it. I loved the vigour of the Clos de Bèze but this has more of a natural majesty. Profound, with a silky texture on top of a hard rock Chambertin. Drink from 2032-2045. Tasted Oct 2024.HK$13,600.00 -
Vinous (93-96)
(the crop level here was in the healthy 30-to-35-hectoliters-per-hectare range; entirely destemmed, as with the Chambertin, as Boillot was concerned that the stems were a bit green): Healthy dark red. Reticent, slightly medicinal aromas of cherry, flowers, spices and stone. Compellingly silky, fine-grained wine with terrific punch and lift; more explosive on the palate in the early going than the Clos Vougeot and classier too. Finishes refined and very long, with rather delicate tannins and terrific subtle flavor intensity and lift. This wine aged in 100% new oak but is not marked by the wood. It should enjoy a long life in bottle but there's nothing hard about it today.HK$5,720.00 -

(13.4% natural alcohol; this vineyard saw less frost than the Boillots' Clos Vougeot parcels but the crop is small here even in the good years, according to Guillaume Boillot, who is aging the wine in a new barrel but vinified it in a traditional cuve for 25 days): Bright dark, red. Medicinal dark fruit and licorice aromas are a bit muted today by a strong oak element. Densely packed and wonderfully tactile but also juicy and energetic, conveying a strong impression of thrust to its very intense black cherry and saline soil flavors. Very concentrated, voluminous wine with a powerful impression of terroir; altogether fatter than the Boillot's '16 from the Côte de Beaune. Really spreads out to saturate the palate and linger on the dense, spicy aftertaste. One feels the thick skins in the wine's very natural tannins.HK$10,325.00 -

The 2021 Chambertin Clos de Bèze Grand Cru is a pretty and beguiling wine. All of the nuance and character of Bèze is present, but with less volume than in most vintages. Sweet floral and spice notes are front and center. This mid-weight elegant Bèze offers tons of harmony and nuance. I very much like the energy here. A rich ruby purple. The bouquet has a flamboyant weight of fruit backed up by a certain amount of oak as well.
