France
The vast and diverse wine regions of France, each with its own unique terroirs, grape varieties, and winemaking techniques, are a treasure trove.
In Bordeaux, the birthplace of some of the world's most iconic wines, esteemed vineyards such as Château Lafite Rothschild, Château Margaux, Château Latour, and Château Haut-Brion produce exceptional red wines, showcasing the art of blending Cabernet Sauvignon, Merlot, Cabernet Franc, Petit Verdot, and Malbec. The region is also renowned for its exquisite white wines, with vineyards like Château d'Yquem and Domaine de Chevalier producing legendary sweet wines.
Moving to Burgundy, the vineyards of Domaine de la Romanée-Conti, Domaine Leroy, and Domaine Armand Rousseau capture the essence of the region's revered terroir, crafting exquisite red wines from the Pinot Noir grape. Meanwhile, Domaine Leflaive and Domaine Coche-Dury are celebrated for their world-class white wines, predominantly made from Chardonnay.
The Champagne region, known for its sparkling wines, boasts illustrious houses such as Krug, Dom Pérignon, and Moët & Chandon, as well as grower-producers like Pierre Péters and Jacques Selosse. These vineyards create exceptional sparkling wines using the traditional method, offering a symphony of delicate bubbles, elegant flavors, and vibrant acidity.
In the Rhône Valley, iconic vineyards like Chapoutier, E. Guigal, and Château de Beaucastel produce remarkable red wines in the northern appellations of Hermitage, Côte-Rôtie, and Cornas, showcasing the elegance and power of Syrah. Further south, Châteauneuf-du-Pape is celebrated for its rich and full-bodied red blends, with Château Rayas and Clos des Papes leading the way.
In Alsace, vineyards such as Domaine Zind-Humbrecht and omaine Trimbach craft exquisite white wines, including Riesling, Gewürztraminer, and Pinot Gris, expressing the region's unique terroir and varietal character.
These are just a few highlights among the diverse array of wines that France offers. From the Loire Valley's crisp whites and elegant reds to the Languedoc-Roussillon's bold and robust wines, each region presents its own vinous treasures.

Jeb Dunnuck (98)Cassis, spice, chocolate, truffle, and floral notes all emerge from the 2000 Château Péby Faugères, a gorgeous, absolute tour de force in world-class Merlot. On the palate, it's full-bodied, deep, rich, and textured, with beautiful balance and a layered, concentrated mouthfeel. This show-stopping, brilliant Saint-Émilion ranks with the crème de la crème of the region and has another 15+ years of prime drinking ahead of it. Drink 2026-2041. |

Wine Advocate (100)A perfect wine in this vintage, the 2005 Péby Faugères has the classic liqueur of blueberries and spring flowers. Dense purple and full-bodied, with unbelievable richness, this tastes like a great Napa Cab from the Beckstoffer To Kalon Vineyard, even though there’s no Cabernet Sauvignon in it. This is a sensational wine – rich, full and multi-dimensional, with a skyscraper-like mid-palate and finish. Kudos to Péby Faugères for producing one of the perfect wines of the vintage. Drink it in about 3-4 years as well as over the following two decades. |

Bordeaux | 6 | 90-92 (VN (ST)) | HK$3,400.00
Vinous - Stephen Tanzer (90-92)Ruby-red. Exotic aromas of dark cherry and coffee liqueur. Fat, sweet and densely packed, with very rich coffee liqueur and chocolate flavors complemented by burnished oak and lifted by spice. A large-scaled, sweet wine whose building tannins reach the front teeth. A second sample of equally high quality showed more fruit expression in the middle palate and finished with a firm acid spine. |

Wine Advocate (90+)The 2007 Cuvee Speciale Peby is a heavily extracted, extremely oaky effort with the wood so prominent that the fruit seems pushed to the background. There is a huge weight to the wine, which is very unusual in 2007, and there is good purity and density, but the oak is overwhelming at this point. The wine possesses outstanding concentration, and if the oak becomes better integrated, it will merit its score and then some. Patience is most definitely required as it needs at least 2-4 years of cellaring. |

Bordeaux | 2 | 95 (WA) | HK$5,055.00
Wine Advocate (95)One of the super classics of the vintage, the 2011 Peby Faugeres (100% Merlot) exhibits a dense blue/purple color as well as gorgeous aromas of acacia flowers, blueberries, raspberries and blackberries. This full-bodied, concentrated wine has more in common with a 2009 or 2010 than most 2011s. The extravagant fruit character nearly conceals some sweet tannin in this masterpiece. Drink it over the next two decades or more. |

Jeb Dunnuck (96)The 2012 Peby Faugeres is another beauty, and shows how strong this vintage is for the right bank. Dense purple-colored with a terrific, ripe, opulent style in its deep black fruits, black cherry, chocolate, and graphite aromas and flavors, it has no hard edges, sweet tannin, just hints of background oak, and a big finish. It’s already drinking brilliantly yet will cruise for another 15-20 years. |

Bordeaux | 3 | 88-90 (VN (ID)) | HK$5,390.00
Vinous - Ian D'Agata (88-90)Moderately saturated ruby-red. Highly nuanced, aromatic nose offers black plum, raspberry, tobacco and nutty oak. Sweet, suave and wonderfully fine-grained on entry, then a little lean in the middle owing to firm but harmonious acidity. Finishes with lingering sweet notes of cherry and currant. |

Wine Advocate (98)Produced from 100% Merlot and matured for 18 months in 65% new and 35% one-year-old French oak barrels, the 2015 Peby Faugeres is medium to deep garnet-purple in color with a strikingly gorgeous nose of exotic spices, baked blackberries, plum preserves, cherry cordial and fragrant earth with smoked meats, lavender, licorice and tapenade hints. The boldly fruited, full-bodied palate features opulent, totally decadent spiced black and blue fruits with a very firm yet ripe structure and finishes with incredible depth and length. Stefan von Neipperg consults on the vineyard management here, while Michel Rolland focuses on harvest dates, winemaking, aging and the final blend - a big bravo to them both on this 2015! |
